Sifting flour

If you want to make airy ones, it is advisable to pre-sieve the flour. This will help saturate the dough with air, making the pancakes lighter.

Oil for frying pancakes

Pancakes should be fried only in vegetable oil. Butter is not suitable. It is best to use good quality refined sunflower oil.

The next important point when preparing pancakes is baking.

First you need to pour vegetable oil into a frying pan and heat it up. Add very little oil. We need the pancake not to stick to the pan, and it shouldn’t float in the oil.

It is convenient to pour the dough with a ladle. Take enough dough so that it covers the entire bottom with an even thin layer. When the dough hits the pan, shake it from side to side to evenly distribute the dough along the bottom.

Pancakes cook very quickly, usually no more than half a minute. Lift one edge of the pancake to check for doneness. If the pancake is golden on the bottom, turn it over with a special spatula or wide knife. Experienced housewives often turn pancakes by simply tossing them in a frying pan, but beginners should not engage in such experiments.

A few seconds are enough for the second side of the pancake to cook until done. Remove the pancake, place it on a plate and start preparing the next one.

In my family, Maslenitsa is a year-round concept! Pancakes are frequent guests on our table. A universal dish, it must be said, is Russian pancakes: you can eat them with honey, with caviar, with salted salmon, and with all kinds of fillings... There's enough for your imagination.

To prepare dough for pancakes with kefir, we will prepare the products according to the list.

Mix eggs, salt, sugar and soda in a bowl.

Add kefir and mix.

Then it's time for flour. Mix with a whisk so that there are no lumps.

What can I say, if our people fall in love with a dish, they will cook it a lot, often in a variety of versions and variations.

Kefir dough recipes are divided into three categories - yeast-free method, yeast method and custard method. It is impossible to single out which one is better and tastier, they are all good, each in their own way. After all, the main thing in the dough is that it is tasty, thin and that the products made from it can be easily turned over. We will consider such recipes today.

For this recipe, you can use only kefir, or you can add a little sour cream for taste. In general, the convenience of kneading dough is that you can prepare it from whatever is left in the refrigerator.

Kefir pancakes with boiling water (step-by-step recipe)

Dough in boiling water produces very thin and holey products. They have a slight sour taste and are very good served with either sour cream or honey.


You can also use them to wrap the filling inside.

We will need (for 20 pcs):

  • kefir - 550 ml
  • flour - 2 cups
  • boiling water - 220 ml
  • egg - 3 pcs (large)
  • sugar - 3 tbsp. spoons
  • + 2 tbsp. spoon for greasing the pan
  • butter - 60 g for serving (you can use sour cream)
  • soda - 1 teaspoon (partial)
  • salt - 0.5 tsp

Preparation:

1. In a large bowl, beat the eggs with a fork with salt and sugar.

2. Add kefir and sifted flour to the mixture. Mix everything with a whisk, but do not beat. Simply stirring is enough. A whisk will help break up any lumps and get a smooth mixture.


3. Boil water and immediately pour it into a glass. Quickly stir soda in it and pour into the dough.

4. Mix with a whisk, but do not beat. Then let it sit for a while. 5 minutes will be enough. During this time, the dough will have time to spread and cool slightly.

5. Add vegetable oil and mix until it is completely combined with the rest of the mixture, that is, until the oil stains disappear.


6. Heat the frying pan thoroughly until lightly smoking and grease it with oil. To do this, you can use a silicone brush, or grease it the old fashioned way with a peeled piece of potato.


7. Pour a ladle full of dough into the frying pan. In this case, you need to quickly turn it so that the dough spreads evenly over the entire surface.

If you want the products to have as many holes as possible, they need to be baked in a very hot frying pan. Pour a very thin layer of dough and grease the pan with vegetable oil before each new pour.

7. Fry the tortilla on one side. When you see that the surface is covered with holes and there is no batter left on it, and the edges have begun to dry out, turn it over and fry it on the other side.

This recipe, although similar to the previous one, is still different. And this difference will be observed not only in the composition of the ingredients, but also in the preparation of the dough.

We will need:

  • kefir - 0.5 liters
  • boiling water - 1 cup
  • eggs -2 pcs (large)
  • flour - 300 gr
  • sugar — — 0.5 tsp
  • salt - 0.5 tsp
  • soda - 0.5 teaspoon
  • vegetable oil - 4 tbsp. spoons

Preparation:

1. Mix kefir 3.2% fat with salt and sugar. You can stir with a whisk, but do not beat.

2. Place over medium heat and stir until slightly warm. Make sure it doesn't curdle. Check the heating temperature with your finger, when it becomes warm, turn off the heat.

3. Remove from heat and add eggs and pre-sifted flour. Mix thoroughly, continuing to stir with a whisk.


4. Boil water, pour it into a glass and quickly stir the soda in it. Add boiling water to the dough and mix again until smooth.

5. Pour in vegetable oil, stir until all the oil circles disappear. Then let the dough sit for a while so that all the ingredients come together. This will take 30 - 40 minutes.


6. Heat the frying pan thoroughly and pour a ladle of dough into it. You may need either a full or less than full ladle, depending on its size. Focus more on the frying pan.

When pouring the dough, you need to quickly turn the pan so that the dough can spread quickly. In this case, the cake will turn out thin. And since it will be thin, then it will have everyone’s favorite holes.


Therefore, when you bake the first pancake, put the dough in a ladle and start pouring it out, and immediately turn the pan. The dough will spread, and if there is not enough, put a little more into the ladle and pour into the free space. If there is excess dough left, there is no need to add it on top of the first layer.

To ensure that the products turn over well and easily, it is best to bake them in a frying pan that is not very large.

7. When the edges begin to dry out and there is no batter left on the surface of the product, turn it over and fry the other side.

  • cold water - 1 glass
  • flour - 1.5 cups
  • egg - 1 - 2 pcs
  • sugar - 1.5 tbsp
  • salt - a pinch
  • vegetable oil - 2 tbsp. spoons + 1 tbsp. spoon for greasing the pan

Preparation:

1. Beat the egg with sugar using a fork. Add flour, salt and mix. The flour should be sifted, preferably even twice. This way it will be saturated with oxygen, and the finished thin cakes will turn out even tastier.


2. Then add kefir, stir until the lumps disappear. To do this, you can use a whisk.

3. While continuing to stir, pour in cold water. For this you can use both ordinary water and mineral water.

4. When the dough becomes homogeneous, add 2 tbsp. spoons of vegetable oil. Stir everything until the oil circles disappear.


5. Let the dough stand for 20 - 30 minutes so that it spreads and becomes homogeneous and elastic.

6. Then heat the frying pan thoroughly and grease it with oil. You can use a silicone brush or the old fashioned way with a peeled potato half. Moreover, it is necessary to lubricate it for the first time so that the first copy does not turn out lumpy. The second and subsequent times, this can be done as desired.


To prevent the first pancake from turning out lumpy, the frying pan into which you pour the dough must be hot and be sure to grease it with vegetable oil.

Try not to pour a lot of dough, pour it slowly, while slightly tilting and turning the pan. The thinner the layer of dough, the more holes it will have!


7. Bake one side, when the edges are slightly dry and there is no batter left on the surface of the workpiece, turn it over to the other side. Someone turns it over with their hands, picking it up from one edge with a knife. Someone turns it over using a flat spatula.

We will need:

  • kefir - 500 ml
  • milk - 1 glass
  • egg - 3 pcs
  • flour - 2 cups
  • butter - 1 tbsp. spoon
  • vegetable oil - 1 tbsp. spoon
  • sugar - 2 tbsp. spoons
  • soda - 1 teaspoon
  • vegetable oil - for frying

Preparation:

1. Mix room temperature kefir with vegetable oil and melted butter.

2. Add eggs, sugar, flour and salt. In this case, it is advisable to sift the flour in order to saturate it with a sufficient amount of oxygen.

Beat everything with a whisk or mixer at low speed until bubbles form. Leave to infuse for 30 minutes.


3. Prepare hot milk (boiling), add soda to it and stir. Pour it into the dough in a thin stream, stirring constantly. You can use a whisk for this.

4. Heat the frying pan until lightly smoking, grease with oil and pour in a portion of the dough. Rotate the pan and spread it in a thin, even layer over the entire surface.


When baking, small bubbles will form on the surface, which will burst and holes will appear. To do this, you need to pour the dough in a thin, even layer.

5. When the bottom part becomes golden brown, turn the product over and bake the other side, also until golden brown. It will bake twice as fast.


6. Place the finished products in a stack, and you can grease each of them with butter. Or wait until they cool slightly and then roll them up and serve with fresh sour cream.

How to cook thin pancakes from choux pastry with kefir (ryazhenka)

Using this recipe, we will prepare our delicious treats using fermented baked milk. But you can use kefir if you wish.


And it happens that a glass of one product remains in the refrigerator, a glass of another. So it’s quite possible to mix them and make delicious “suns” from this mixture.

We will need:

  • Ryazhenka - 0.5 liters (4%)
  • boiling water - 1 cup
  • flour - 2 cups
  • egg - 1 pc.
  • sugar - 2 tbsp. spoons
  • salt - a pinch
  • soda - 0.5 teaspoons
  • vanillin - 1 g
  • vegetable oil - 1 tbsp. spoon + 1-2 tbsp. baking spoons
  • butter - 20 g + oil for greasing

Preparation:

1. Take out the butter and let it sit at room temperature until it becomes soft. Also remove the fermented baked milk from the refrigerator in advance. We will need it at room temperature.

2. Mix soft butter with sugar, vanillin, salt and egg until smooth. You can use a whisk or mixer to beat.

3. Add fermented baked milk and vegetable oil to the resulting mixture. Mix with a whisk or mixer at the lowest speed.

4. Continuing to beat, gradually add the sifted flour.


5. Pour soda into boiling water, stir and pour into the mixture, continuing to stir.

6. Bake thin cakes on both sides in a hot and greased frying pan. How to do this was described in previous recipes.

The finished products have a fresh vanilla aroma and are very tasty due to the mild taste of fermented baked milk. Instead of vanilla, you can add lemon zest and this will also add additional taste and aroma.

If you use zest, then use only the yellow part of the peel, the white part is bitter, and the finished products can also take on this taste.

As mentioned above, fermented baked milk is also perfect for making dough. It can be safely used both instead of kefir and together with it. And this is the recipe I want to offer you.


This amount of ingredients makes quite a lot of pancakes. Therefore, you can use half the portion.

We will need:

  • kefir - 0.5 liters
  • Ryazhenka - 0.5 liters
  • egg - 3 pcs
  • sugar - 3 tbsp. spoons
  • flour -3 tbsp. spoons
  • salt - a pinch
  • soda - 1 teaspoon
  • vegetable oil - 4 tbsp. spoons

Preparation:

1. Beat eggs with sugar using a fork.

2. Add kefir without mixing with the egg, add soda and shake. As soon as bubbles appear, add sifted flour. Mix.

3. Gradually introduce fermented baked milk. The dough should look like liquid sour cream.

4. Add vegetable oil and stir until the oil stains disappear.

5. Place the frying pan over high heat and heat it up. Grease with oil. Pour a thin layer of dough, the thinner it is, the thinner the finished cakes will be, and the more holes they will have.

6. Before each new portion of dough, grease the pan with oil. You can also bake without greasing. But if you lubricate, there will be more holes.


Try both and then choose for yourself which of them you like best.

7. When the pancake is browned on one side, turn it over to the other side. The second side will take less time to fry.

For this recipe, you can use either dry or fresh yeast. Today I’m cooking with fresh ones, but if you want to use dry ones, then calculate how much you need to add for a given amount of flour.


The consumption for a certain amount of flour is always written on the bag. Since the varieties of dry yeast are different, the calculations are different.

We will need:

  • kefir - 0.5 liters
  • water - 300 ml
  • fresh yeast - 1 teaspoon
  • flour - 320 gr
  • egg - 3 pcs
  • sugar - 2 teaspoons
  • salt - 0.5 tsp
  • vegetable oil - 2 s. spoons
  • butter - for serving

Preparation:

1. Dilute yeast in 50 ml. warm water, add a teaspoon of sugar. Stir, cover with a napkin and place in a warm place for 20 minutes until the dough rises.


2. Beat eggs with salt and remaining sugar using a fork.

3. Heat kefir in a water bath to about 40 degrees and add to the resulting egg mixture.

4. Sift the flour through a sieve and gradually add to the mixture of kefir and eggs. Knead a thick dough with the consistency of thick sour cream. Let stand for 5 minutes so that all the ingredients have time to disperse.

6. Add the dough that has slightly risen by this time. Mix.

7. Pour in 250 ml. warm water. Mix the dough until smooth and elastic. Cover with a napkin or towel and leave in a warm place to infuse for 1 hour.


8. Then pour in vegetable oil, knead the dough and stir in the oil.

9. Products should be baked in a hot frying pan.


10. Grease the finished products with melted butter and serve hot. Enjoy eating!

4. Bring the milk to a boil and pour in a thin stream into the resulting dough. At the same time, constantly stirring it with a whisk so that the milk is evenly distributed and the dough becomes homogeneous and quite liquid.

5. Continuing to stir, pour in the oil and stir until the oil circles disappear. The dough should not be liquid. It seems somewhat “lingering”, quite heavy.


6. Grease the frying pan with oil and bake the products on a hot surface until golden brown on both sides. Since the dough is heavy, the baking time should be slightly longer than for thin dough.


The pancakes turn out to be openwork, patterned, as if decorated with intricate lace. It's a shame to even eat these. I would have looked and looked!
