Ingredients:

  • 200 g champignons;
  • 1 small onion;
  • 2 medium sized potatoes;
  • 1-2 pieces of green onions;
  • 1-2 pickled cucumbers;
  • 2 hard-boiled eggs;
  • 50 g hard cheese;
  • 100 g mayonnaise;
  • 1 tablespoon of vegetable oil.

How to prepare the “Mushrooms under a fur coat” salad:

Wash the champignons and cut into thin slices. If the champignons are large, cut the plates into another 3-4 pieces. Cut the onion into small pieces.

Sauté the onion in hot vegetable oil until transparent. Add the mushrooms and fry together until tender, 4-6 minutes. Salt and pepper to taste, cool.

Boil the potatoes in their jackets and cool to room temperature. Remove the skin and grate the potatoes on a coarse grater. Finely chop the green onions. Pickled cucumbers are also grated on a coarse grater, just like potatoes.

Peel the hard-boiled eggs and grate them on a medium grater. We also grate hard cheese on a medium grater.

Place the salad on a plate or salad bowl, forming it in layers. First, add a layer of champignons and onions and level them.

Then place the boiled potatoes. Sprinkle with green onions, reserving a small amount for garnishing the salad.

We cover the onion with a mayonnaise mesh - a little more than 1/3 of the total amount of mayonnaise is used. Place grated pickles on mayonnaise.

Sprinkle the top of the salad with grated cheese, about half of the total amount.

Apply the remaining mayonnaise to the sloping sides of the salad, sprinkle them with cheese, not reaching the top of the salad. Carefully place green onions in the rim that is not covered with cheese. That's all, the “Mushrooms under a fur coat” salad is ready.
