Required Products:

  • chicken fillet - 4 pieces
  • a large handful of prunes
  • cheese - approximately 100 g
  • salt pepper
  • spices

We wash the chicken fillet, dry it with a paper towel and cut it along the piece, but not all the way, without cutting about 1 cm. This must be done so that the cut fillet can be unfolded like a book.

Now you need to beat the meat with a hammer or just a knife in different directions.

Now let's prepare the foil. Spread the required size sheet of foil, sprinkle with salt and spices. I used coarsely ground pepper, nutmeg, paprika, mustard seed and spicy adjika with garlic and red pepper. You can take your favorite spices. Place the fillet on foil with spices.

The cheese needs to be grated, coarse or fine, as you like. Spread the cheese on the fillet.

On top are prunes pre-steamed in boiling water. You can lay out whole prunes, halves or cut into strips.

Now roll the chicken fillet into a roll.

You can secure the edges with toothpicks. Roll the roll tightly into foil and secure the edges.

Place the roll on a baking sheet. Pour a glass of water onto a large baking sheet. Place in the oven and bake for 30-40 minutes at 200 degrees.

We take it out, unfold it, cool it. Now you can cut and serve the chicken roll with prunes.

Chicken rolls with prunes - general cooking principles

Snow-white chicken fillet meat is the most suitable part of the chicken carcass for making rolls.

Before use, chicken must be washed under water and dried well with a disposable towel. If the fillet is on cartilage or bone, they are carefully separated with a knife. Films with remaining chicken fat should also be cut off. The processed meat is left as a whole piece or cut into longitudinal plates. To make the products easy to roll, the chicken is beaten, then seasoned with spices and lightly salted.

Before use, prunes must be scalded with boiling water and soaked in water until noticeably softened. Then lightly squeeze and grind according to the recipe.

Along with prunes, other products that go well with the main ingredients are often added to the filling of rolls. These can be fried mushrooms, hard and pickled cheeses, or nuts.

Chicken rolls with prunes are stewed on the stove or baked in the oven with a specially prepared sauce, in dough or with their surface well coated with mayonnaise. Usually the products are pre-fried until golden brown in vegetable oil in a frying pan. Sometimes, before frying, semi-finished products are breaded in coarse white breadcrumbs.

The dish is served both hot and cold, cut into thin transverse pieces. It can be a stand-alone snack or served with a side dish of mashed potatoes or pasta.

3. Remove the puff pastry from the package to allow it to thaw thoroughly.

4. Cut the brisket into thin longitudinal slices and pound it, just like chicken.

Stewed chicken rolls with prunes and mushrooms in sour cream sauce

Ingredients:

Six large chicken fillets;

50 gr. “Dutch” or “Russian” cheese;

400 ml low-fat sour cream;

Pitted prunes – 150 gr.;

100 gr. fresh champignons;

Fresh dill, ground pepper.

Cooking method:

1. Prepare the mushrooms. Clean the remaining soil from their legs, remove the skin from the caps and cut the mushrooms into small slices. Place in a dry frying pan and place over low heat.

2. When the released moisture has completely evaporated, add one and a half tablespoons of oil to the pan and continue cooking, stirring, until the pieces are browned. Turn off the heat and cool.

3. Grate the hard cheese into the smallest shavings. The cheese crumble should be short and thin. Soak the prunes in warm water for 10 minutes, then dry and cut into thin strips.

4. When cutting the fillet, separate a small part from the piece; it will not be useful. Pound the remaining large pieces of chicken thinly through the bag and lightly sprinkle the top with a mixture of pepper and salt.

5. On the narrower side of the chopped layers of meat, closer to the edge, place some mushrooms, chopped prunes next to them and sprinkle everything with cheese crumbs. Roll the rolls, pin their edges with short wooden skewers and place the products in a thick-walled pan.

6. Pour in sour cream and place on high heat. When the contents of the pan begin to boil, add chopped garlic and finely chopped dill to the sauce for piquancy. Reduce heat to medium and simmer for forty minutes.

4. Dip each resulting semi-finished product in a beaten egg and roll well in a mixture of breadcrumbs and sesame seeds.

5. In a thick-walled frying pan over medium heat, heat the vegetable oil well and dip the breaded rolls into it. Brown lightly on each side, uncovered, and place in a deep saucepan without a handle.

Chicken rolls with prunes and nuts baked in the oven

Ingredients:

Two large chicken fillets;

A small handful of walnut kernels;

Pitted prunes – 5 pcs.;

Four tablespoons of very fatty mayonnaise;

Garlic - to taste;

3. Pour boiling water over the prunes for at least 20 minutes, then lightly squeeze the fruit. Using a heavy cleaver, finely chop the nuts and peel the garlic.

4. Blend the soaked garlic and chopped nuts with a blender. Cut the steamed prunes into thin strips and combine with the garlic-nut mixture. Add, stirring, two tablespoons of mayonnaise.

5. Place a couple of spoons of the prepared filling on the broken pieces of chicken fillet and form into rolls. Be sure to secure the edges of the products with toothpicks and place them on a baking sheet, placing them seam side down.

7. At 180 degrees, cook the chicken rolls with prunes for at least 25 minutes until the top is browned.

Chicken rolls with prunes - cooking tricks and useful tips

Be sure to beat the fillet cut into plates or taken in whole pieces. The plates are only lightly, and whole pieces are up to a thickness of no more than 0.8 cm. Rolls from beaten meat will roll up easier and will be more tender.

To prevent the products from unfolding during cooking, carefully secure their edges with thin short wooden skewers or tightly wrap the semi-finished products with culinary thread, which must be cut off before serving.

If you bake products in the oven, be sure to preheat it to the desired temperature. If you put the products in a cooled oven, the dish will most likely come out dry.
