  • Salted herring - 2 pieces or 500 grams, but it all depends on the volume. You can take fillet or whole herring, whichever you prefer;
  • Potatoes - 5 medium pieces;
  • Onions - 2 pcs.;
  • Carrots - 2 large;
  • Eggs - 4 pcs.;
  • Beets - 2 large;
  • Mayonnaise.

The amount of ingredients for herring under a fur coat depends on the scale of the holiday and the dishes in which you will cook it. It is best to take a large and deep semicircular salad bowl. Since we will be boiling most of the ingredients, we will talk about this separately.

How long to cook vegetables for salad

We will boil all the ingredients, except herring and onions, and then grate them on a coarse grater.

  1. Finely chop the onion and pour boiling water for 10 minutes so that it is softer and does not have a strong smell.
  2. The potatoes take about 30 minutes to cook, but for some they will be large, for others small, and the cooking time depends on this. In the process, pierce with a fork or knife to determine its condition.
  3. Carrots - also 30-40 minutes.
  4. Beets - cook for a long time, about 2 hours, if the beets are large, then maybe longer.

Although eggs are not vegetables, we cook them too, for about 10 minutes, very hard.

Potatoes and carrots can be boiled together, beets separately, eggs also separately.

When everything is ready, drain the water and cool the vegetables.

To make eggs easy to peel, immediately after boiling, hold them under running cold water and leave for 5 minutes.

To cool vegetables faster, place them on a balcony or loggia.

Preparing all ingredients for herring under a fur coat

Before you begin the process of preparing a fur coat, you need to prepare everything. Let's break it down point by point again.

  • Herring - just cut it into cubes; if you took a whole fish, then clean it first.
  • Finely chop the onion, pour boiling water over it, and after 10 minutes drain the water.
  • Potatoes, carrots, beets and eggs - three on a coarse grater and put everything on different plates.
  • Mayonnaise - it will serve as an impregnation between layers. To make it spread easily, I will tell you one trick.

Take a little boiled hot milk and mix with mayonnaise so that the consistency is like sour cream and then the mayonnaise will be easy to spread and the impregnation of the fur coat will be more tender!

We will lay out the fur coat in layers; this type of salad turns out much tastier. Moreover, we will have herring under a fur coat in 2 layers.

Stages of forming salad layers step by step

Take a large, deep salad bowl and grease the bottom with a small amount of vegetable oil.

  1. Lay out the potatoes as the first layer, take half of the total amount. Distribute evenly over the entire surface.
  2. Lubricate with mayonnaise, not so that the vegetables float, evenly, but coat completely.
  3. Then we lay out the herring - also half and distribute it in the same way.
  4. Onion - spread half of the volume on top throughout the herring.
  5. Coat with mayonnaise.
  6. Carrots - also 1/2 part.
  7. Mayonnaise.
  8. The egg is half of everything.
  9. Mayonnaise.
  10. Beets - also half.
  11. We also coat it with mayonnaise.

Then we repeat all the layers from the beginning again. Potatoes, mayonnaise, herring, onions, mayonnaise, carrots, mayonnaise, egg, mayonnaise, beets and mayonnaise on top.

At this point, the process of preparing a two-layer herring is almost complete. Now all that remains is to put it in the refrigerator for 8 hours so that all our ingredients are soaked. It will turn out to be just an awesome fur coat.

Herring under a fur coat in one layer

Sometimes you don't want to bother with two layers of salad preparation. And you can do everything in one. The order of things is the same, just don’t divide the ingredients into 2 parts, but lay them out in the same order in one layer. There is certainly a difference in the sensations during the eating process, but when you don’t have time, you don’t have to worry about two layers of fur coat.

The form of serving a dish on the table can be different and depends on the flight of fancy of the cook.

In 3-4 hours it becomes even tastier (and overnight - simply delicious), all layers are soaked and on the table you have that very taste of childhood.

For the salad, it is important to choose fresh fatty fish and cut it well. Divide the fish into two fillets and remove the bones.

What to do with vegetables? Potatoes, beets and carrots can be boiled or baked. As a rule, I bake potatoes, but boil carrots and beets. At the same time, I boil the eggs, cool them in cold water, then peel them.

The apple (or apples) must also be peeled. I advise you to grate all the ingredients instead of cutting them. Grated vegetables, eggs and apples in the salad feel more tender.

It’s best to make herring under a fur coat according to the recipe with “sweet” onions - for example, with white lettuce.

Now it's time to lay out the ingredients. Place them one by one on a plate.


What’s good about the herring salad under a fur coat: its taste does not get boring for a long time and you can eat it for a long time, since the “real” fur coat is even tastier than a fresh one.

1st layer - grate potatoes - 1cm thick

Cut the fish fillet into medium pieces and the onion into small pieces. Grate the potatoes, carrots and eggs on a coarse grater. Pour gelatin with 70–100 ml of cold water.

Place a springform pan with a diameter of 16 cm on a dish. Place potatoes on the bottom and grease them with mayonnaise. Distribute herring, onion, eggs and mayonnaise on top. Then lay out the carrots and lightly cover them with mayonnaise.

Grind the boiled beets in a blender, adding 2-3 tablespoons of mayonnaise. Heat, but do not bring to a boil, the soaked gelatin and pour into the beet mass. Using a blender, achieve a homogeneous creamy consistency.

Remove the 16 cm mold from the salad and place the 18 cm one. Fill the top and sides of the salad with the beetroot mixture and level the top with a spatula or knife.

Place the dish in the refrigerator overnight. Before serving, remove the ring from the salad.

Unlike the previous dish, this recipe does not contain potatoes, carrots and eggs. Under the beet mousse there is only aromatic fish.

Ingredients

  • 1 beet;
  • 2 teaspoons gelatin;
  • 6 tablespoons of mayonnaise;
  • salt - to taste;
  • ground coriander - to taste;
  • ¼ lemon;
  • 1 fillet of salted herring;
  • 6 rectangular slices of black bread;
  • 1–2 slices of lemon;
  • a few sprigs of basil.

Preparation

Boil the beets, cool and peel. Pour gelatin with 50–70 ml of cold water.

Cut the beets into pieces, add mayonnaise, salt and coriander and blend with a blender until smooth and creamy. Pour lemon juice into the mousse and stir.

Lightly heat the gelatin, add to the beet mass and beat it again.

Cut the herring into small cubes. Cut round pieces of bread using metal rings. Leave the bread in the molds and place the herring on it. Pour in the beet mixture and refrigerate for an hour. Garnish with lemon slices and basil leaves.

To make eating more convenient, pierce the unusual appetizer with skewers or place it on pieces of black bread.

Ingredients

  • 1 beet;
  • 3 potatoes;
  • salt - to taste;
  • 1 fillet of salted herring;
  • ½ onion;
  • several sprigs of dill;
  • 1 teaspoon lemon juice;
  • 1 teaspoon olive oil;
  • a handful of sesame seeds;
  • a few sprigs of parsley.

Preparation

Boil the beets and potatoes until tender. Grate the beets on a fine grater and squeeze. Dry the boiled potatoes a little and turn them into puree. Mix and salt the vegetables.

Cut the herring and onion into small cubes and mix with chopped dill. Make small cakes from vegetable puree. Place the fish mixture in the middle of each and form strawberries, bringing the edges together.

Brush them with a mixture of lemon juice and oil. Make berry seeds from sesame seeds, and leaves from parsley.


Another original rendition of a familiar dish.

Ingredients

  • 1–2 carrots;
  • 3–4 beets;
  • 150 g cream cheese;
  • salt - to taste;
  • 9 rectangular pieces of black bread;
  • a little vegetable oil;
  • 1 salted herring;
  • 1 red onion;

Preparation

Boil the carrots and beets, cool and peel. Puree the vegetables with the cream cheese in a blender until smooth. Add salt as desired.

Place the puree into a piping bag and refrigerate while you prepare the tartlets.

To do this, cut off the crusts of each piece of bread. Grease a muffin tin and place bread tightly in the bottom of each cavity. Place in an oven preheated to 200°C for 10 minutes. Cool the finished tartlets and remove them from the mold.

Cut the herring. Cut the fillet into medium cubes and the onion into quarter rings. Place fish in each tartlet and place onion on it. Squeeze the puree from a piping bag on top.

An apple is used instead of potatoes in this recipe. Although you can also add it if you can’t imagine a salad without this vegetable. In any case, fruity sourness will give the dish a piquant taste.

  • 2–3 carrots;
  • 2–3 beets;
  • 6 eggs;
  • 2 green apples;
  • 1 salted herring;
  • 1 onion;
  • a few tablespoons of mayonnaise;
  • salt - to taste.

Preparation

Boil carrots, beets and eggs, cool and peel. Grate them and peeled apples on a coarse grater. Cut the herring and cut the fillet into medium cubes. Chop the onion.

Place the fish on a dish, cover it with onions and brush with mayonnaise. Then spread the apples, a layer of eggs and mayonnaise. Place carrots and beets on top.

Cover the beet layer with mayonnaise and put the salad in the refrigerator for several hours.

Vegetarian version of salad with seaweed and Adyghe cheese.

Ingredients

  • 3–4 potatoes;
  • 2–3 carrots;
  • 2 beets;
  • 400 g seaweed;
  • salt - to taste;
  • ground black pepper - to taste;
  • a little vegetable oil;
  • 200 g of Adyghe cheese;
  • a few tablespoons of mayonnaise (if you don’t eat eggs, take lean mayonnaise).

Preparation

Boil potatoes, carrots and beets. Cool the vegetables, peel and grate on a coarse grater. Add salt, pepper, oil to each vegetable, as well as seaweed, and mix. Grate the Adyghe cheese on a coarse grater.

Place the potatoes as the first layer. Lubricate it with mayonnaise. Then distribute the seaweed, cheese, mayonnaise, carrots and mayonnaise again. Place the beets on top and also cover them with mayonnaise.

Place the finished salad in the refrigerator for a couple of hours.
