Ingredients:

- minced meat (or chicken) – 250 g;
- water or broth – 1.5 liters;
- potatoes – 3-4 tubers;
- carrots – 1 medium;
- onion – 2 medium onions;
- sweet pepper – 1 piece;
- tomatoes – 2-3 pcs (or 2 tbsp tomato sauce);
- vegetable oil or butter – 2 tbsp. l;
- egg – 1 pc;
- salt - to taste;
- black pepper, coriander or any spices - to taste;
- garlic – 2 cloves (optional);

Pour peeled and diced potatoes (straws, slices) into boiling water or broth and bring the broth to a boil again. Cook, covered with a lid, for 10-15 minutes, until the potatoes are almost done. The better the potatoes are boiled in this soup, the tastier it will be.




In the meantime, prepare the remaining vegetables for the soup and make minced meat for the meatballs. Cut the carrots into strips or cubes, or you can grate them - choose what is more convenient for you. Cut the bell pepper into strips, chop one onion into half rings or cut into small cubes. If adding fresh tomatoes to the soup, cut them into small pieces.




Heat the oil in a frying pan, pour the onion cubes into it, fry a little, without letting it turn brown. Add the carrots, fry a little more so that the carrots become softer and soaked in oil.




Add sweet peppers and tomatoes. Fry for another 3-4 minutes, the tomatoes will give juice and lightly fry. If you add tomato sauce to the soup, then add it to the vegetable frying about two minutes after the pepper.






Transfer the roasted vegetables into the pan with the potatoes. As soon as it starts to boil, add salt to taste, reduce the heat to very low so that the soup does not boil, but rather simmers.




Let the soup cook over low heat, and we’ll do the meatballs. We make minced meat from the meat, rolling small pieces together with the peeled onion. Add egg, salt, spices to taste. Mix everything into a homogeneous viscous mass. It is not necessary to add bread, but if you want the meatballs to be softer and more tender, grind a slice of white loaf soaked in water through a meat grinder along with the meat.




Roll the minced meat into small balls the size of a walnut (or smaller/larger). Place the meatballs in the soup, turn up the heat a little and cook for 10 minutes.

First you need to prepare the vegetables. Firstly, carrots. It needs to be peeled and cut into small cubes (more like triangles). Next, the carrots need to be simmered with butter. To do this, take a small saucepan, put it on low heat, add half (about 7 grams) of butter, a couple of tablespoons of water and cook it for just a minute or two. Since we will still be cooking it in the soup, we don’t need it to be completely cooked.


We need to blanch the onion and then saute it. Blanching is simply pouring boiling water or steam over a vegetable. But at the same time, if we take boiling water (and this is the most convenient), then a colander will not help us, since we need the onions to lie in this very boiling water for about a minute. This is done in order to remove its pungent odor and bitterness.

Cut the onion into small cubes, pour boiling water for a minute. Then drain the water.

Heat the pan, add the remaining butter and onion. Sauté over low heat for about a minute. It just needs to become translucent and not brown.

I had chicken broth that I cooked the night before. Therefore, I used half a liter of broth and 0.4 liters of water. If you use only water, then you should understand that the taste of the soup will be simpler than with broth.

Next, add salt, water and mix the minced meat thoroughly.


If you see that the minced meat is a little thinner than you would like, beat it off. Just pick it up with your hand and throw it back into the bowl 20-30 times. After this simple procedure, the minced meat will become a little denser and more elastic.

Since we are talking about soup for small children, the size of the meatballs should be appropriate - about 10 grams, which is about a little less than the size of a walnut. But you can make them larger and then simply break them with a fork right in the plate. Extremely time-saving, since small meatballs take up time. Sculpt with wet hands.


Next, according to technology, they (meatballs) must be boiled separately from the soup in a small amount of water. Apparently this is done in order to allocate equal amounts to each child. Place three or four meatballs on a plate and pour in the soup.

We'll throw them straight into the soup. After the meatballs, increase the heat, bring the soup to a boil again, close the lid and simmer over low heat for another five minutes. If you made the meatballs a little larger, then about 7-10 minutes.


Check the soup for salt. If you really want it, it’s time to add some salt.

If you have introduced sour cream to your child’s diet, you can serve it with it and, for example, chopped parsley or dill. And if you are pouring it for yourself or your husband, then it’s fine to add some pepper.


When my children were still very small, for example, my eldest son really loved these puree soups. I was absolutely lazy to chew. And for small children about a year old, in whose diet you have already introduced almost all vegetables and meat (in this case, it is better to replace beef with veal), you can puree this very soup in a blender. By the way, I ate it with pleasure exactly in this form, remembering how I finished everything with my little children... Nostalgia :)

For example, do not let the carrots soak, but immediately add them to the sautéing process with the onions, the blanching of which, by the way, can also be skipped. Ingredients:

  • 230 g minced meat;
  • two onions;
  • one egg yolk;
  • salt to taste;

  • a spoonful of sunflower oil;

Peel the onion heads and rinse under running water. Chop both onions smaller with a knife.

How to cook

First, start with the meatballs. For them, boil the rice until soft. Do not rinse the cereal, simply drain the broth. Add minced meat to the rice, break an egg, add a little salt, seasonings and starch. Mix the mixture thoroughly to obtain a homogeneous mixture.

Peel and rinse the potatoes, celery stalks and spinach leaves. You'll have to tinker with the latter. Tear the leaves from the bush and place in a bowl of cool water. Stir a little. You will immediately see how the earth falls. Collect leaves and change water. Then do it again. Rinse each leaf under running water and leave to dry.

Cut the potatoes into cubes and the celery into slices. Place them in a saucepan and add 2.5 liters of water. Let it simmer, and after boiling, reduce the heat a little.

Take the minced meat in your hand and clench your fist so that a piece of meat comes out between your thumb and forefinger. Transfer it to boiling broth. Thus, form and place all the meatballs in the pan. You will get a lot, they will be small - it’s convenient to cook and eat.

After a quarter of an hour of slowly simmering the soup, add salt and spices. Chop the spinach and add to the soup. After a couple of minutes, remove the dish from the stove.

You can serve it to the table. Be sure to use rice already boiled for meatballs, otherwise it will swell and the meat balls will break in the hot soup. It will also turn out delicious, but the appearance of the first dish will be different.

Option 4: Soup with meatballs, cereals and potatoes

Cereal soups are famous for their delicate and satisfying taste. This soup will be like that too. We will leave a minimum of ingredients and a maximum of vitamins in them.

Ingredients:

  • 200 g potatoes;
  • a handful of millet;
  • 50 g carrots;
  • 50 g turnip onion;
  • salt, spices;
  • 240 g minced chicken;
  • one egg yolk;
  • a bunch of green onions;
  • 2 tbsp. l. wheat flour.

Step by step recipe

Peel the vegetables and rinse them to remove dirt and sand. Cut the potatoes into cubes. Chop the onions and carrots into crumbs.

Pour water into a saucepan and bring to a boil. It should be about 2.5 liters. Add all vegetables.

Rinse the millet in warm water and also add it to the pan. Stir and let the broth boil. Then cook over low heat. It is better to cover the lid.

For the meatballs, wash the green onions and chop finely. Combine it with minced meat, yolk, salt, spices and flour. Stir.

Divide the minced meat into small balls and carefully place into the boiling soup. Cook while stirring.

After a quarter of an hour everything should be ready. Try the dish, maybe you need to add some salt or spices to taste.

Pour the soup into bowls while still hot. Garnish with parsley. Once it cools, its aromas and flavors will change slightly. Freshly cooked soup is healthier than after storage.

Option 5: Soup with meatballs, potatoes and smoked meats

Ingredients:

  • 30 g bacon;
  • 300 g of minced meat (one type or mixed);
  • 1 tbsp. l. powdered milk or cream;
  • a bunch of parsley;
  • one egg;
  • a handful of small vermicelli;
  • 200 g potatoes;
  • one tomato;
  • salt.

How to cook

Finely chop the bacon. Mix with minced meat. Add milk powder, egg and a little salt. Stir and divide the mixture into pieces. Form into balls.

Peel the potatoes and rinse. Cut into cubes. Throw into a saucepan and fill with hot water. Bring to a boil and remove the foam.

Rinse the tomato and grind into puree. Add to soup.

When all the ingredients are ready for the pan, add the vermicelli. After boiling again, cook for 5-6 minutes. Turn off the heat and cover the pan with a lid. After 7-10 minutes it is ready to eat.

Sort and wash the parsley leaves. Finely chop. Sprinkle the soup with herbs.

Compound:

  • 400 g turkey (can be replaced with any other meat; if you want to get mixed minced meat, take different types of meat in equal proportions, for example, 200+200);
  • small onion;
  • 50 ml water (can be replaced with broth or milk);
  • 50 g stale white bread;
  • salt and spices to taste.

Let's cook meatballs

  1. Soak the bread in the liquid for 10-15 minutes.
  2. Let's pass the turkey through a meat grinder. Grate the onion or chop it in a blender.
  3. Combine all the ingredients, mix well and mince again. This will make the meatballs especially airy and tender.
  4. Knead the minced meat well, throwing it on a wooden board. You should get a dense, non-falling mass.
  5. Roll the minced meat into small balls - a little larger than a cherry.

This recipe makes 500g meatballs. If this amount is not enough for you, simply double or triple the ingredients.

To make the meat balls more dense, you can add an egg to the minced meat before kneading. However, the egg also makes the meatballs firmer. And for a particularly delicate taste, you can add softened butter to the minced meat. 15 grams is enough for this amount.

The recipe allows you to “implement” other changes. For example, you can mix a little very finely grated hard cheese or dried mushrooms or chopped herbs into powder into the minced meat.

Potato soup with meatballs: a very quick recipe

This soup is prepared almost at lightning speed, and the result exceeds expectations.

Cooking time: 30 minutes.

Number of servings: 6-8.

Potato Meatball Soup contains the following ingredients:

  • 2 liters of water;
  • 500 g meatballs;
  • 3-4 potatoes;

The recipe allows for the following changes: vermicelli can be boiled separately and added to the soup 2 minutes before it is ready, along with the meat balls.
