Easy Homemade Coffee Ice Cream Recipe

  • instant granulated coffee - 4 tablespoons,
  • yolk from 4 chicken eggs,
  • sugar – 1 glass,
  • milk – 750 ml.

Cooking process:

  1. Heat the milk, remove from the stove and add coffee to it. Mix well until the granules are completely dissolved. Allow the solution to cool to room temperature.
  2. Carefully separate the egg yolks from the whites. We don't need proteins, so they can be used in preparing another dish. Mix the yolks with sugar until smooth.
  3. Add the sweet egg mixture to the cooled milk and coffee, mix well and place the resulting mixture on low heat. Bring to a boil, stirring constantly, then remove from heat and cool.
  4. Pour the resulting semi-finished coffee ice cream into molds or place in a container with a tight-fitting lid and place in the freezer for hardening.

The following ingredients are required:

  • heavy cream (from 33%) – 400 g,
  • condensed milk – 1 can,
  • ground instant coffee - 1 heaped tablespoon,
  • prunes – 100 g,
  • chocolate chips, nuts - to taste.

Cooking process:

  1. Pour ground coffee with hot water in a 1:1 ratio (1 tablespoon coffee + 1 tablespoon water), stir.
  2. Beat the cream with a blender until stable peaks appear.
  3. Add condensed milk and dissolved coffee to the whipped cream, beat thoroughly again.
  4. The resulting mixture must be placed in the freezer for about 2-3 hours so that it “sets.”
  5. In the meantime, let's take care of the prunes. It needs to be rinsed well and filled with hot water for 5-7 minutes to soften and swell.
  6. Drain the water from the steamed prunes and crush them a little in a blender, literally for 15-20 seconds. No need to turn prunes into porridge!
  7. After the time has passed, remove the milk-coffee mixture from the freezer; it should be slightly frozen. Mix well and add crushed prunes. Place the coffee ice cream back in the freezer until completely hardened (about 2 hours).

I tried making ice cream at home several times, but the experiments were unsuccessful. As for my first recipe from this book, I can say that I would rate my work at 4. I think the taste of the resulting delicacy is very balanced and harmonious, it is lower in calories compared to ice cream prepared on the basis of heavy cream, but the structure of the ice cream itself is I'm still not very homogeneous, with ice flakes.

Because it contains coffee, which is not recommended for children under 14 years of age. The main active ingredient in coffee is caffeine, and its consumption can have a detrimental effect on the nervous system of a growing organism. If you are over 14 years old, you can safely start preparing a delicious dessert! Ice cream with coffee will appeal to all lovers of a fragrant and invigorating drink! You only need five ingredients to make a delicious dessert. From the proportions of ingredients indicated in the recipe, 3 small portions are obtained, but if you have an incorrigible sweet tooth, feel free to increase the proportions by 2-3 times! Ice cream with coffee turns out very smooth and tasty, so its recipe will surely end up in your cookbook.

Ingredients:

  • Cream 33% fat - 200 g;
  • Milk - 75 g;
  • Sugar - 50 g;
  • Chicken yolks - 2 pcs.;
  • Natural ground coffee - 1 tbsp.

Recipe for making coffee ice cream at home

1. First of all, brew coffee. To do this, pour the milk into a saucepan and let it boil.

2. Remove from heat and immediately add ground coffee. Stir with a spoon, and so that the coffee brews well, cover with a lid and leave to cool until warm. Instead of brewed coffee, you can use instant coffee, but in the first case, the finished coffee ice cream turns out to be more aromatic.

3. When the coffee mixture has cooled, strain it through cheesecloth folded in several layers (instant coffee does not need to be strained).

4. Add chicken yolks and sugar to the coffee milk. Mix with a whisk until smooth. We build a water bath. Place a saucepan with water on the stove. Bring to a boil. Place a heat-resistant deep container with the prepared coffee mixture on top. The bottom of the bowl should not touch the boiling water. Stir constantly with a whisk and heat until thickened. It will take about 10 minutes for the coffee-egg mixture to thicken.

5. If you dip a spatula into the coffee mixture and then run it with your finger, a mark remains - this means that the cream has thickened enough.

6. Remove from the water bath and cool in cold water.

7. Place heavy cream (33% and above) in a deep container. Beat with a mixer on medium to high speed until thick. Whip with care so as not to beat them and get butter.

8. Strain the cooled coffee-egg mixture through cheesecloth. Add it to the whipped cream.

9. Stir until smooth.

10. To freeze the frozen mass, we use disposable cups, special molds or a container with a lid. In the case of a container, it is advisable to stir the ice cream every 40-60 minutes for the first 2-3 hours to prevent the formation of large pieces of ice.

11. When the coffee-cream mixture hardens a little in the freezer, you can insert a stick into the middle of the glass - it will make it easier to remove the ice cream from the glass and eat it. Place the dessert molds in the freezer until completely frozen.

  1. It is better to take cream with a fat content of exactly 33%, and it is better to use store-bought products. Homemade cream is often richer, and ice cream with it may turn out coarser and with fatty lumps.
  2. To make the ice cream tender, soft and airier, the cream must be well whipped. The bowl for whipping must be dry, and the cream itself must be cold. A hand whisk will not work; you need to use a mixer. And a little secret: before cooking, it’s better to put the container with the mixer whisks in the freezer for 5 minutes.
  3. Do not over-whip the cream, otherwise you may turn the mixture into butter.
  4. It is better to use brewed coffee - it is considered to be of higher quality and more natural.

  • cream 0.5 liters;
  • sugar 100 g, preferably brown;
  • milk 150 ml;
  • yolks 5 pcs.;
  • 20 g ground coffee, if not available, can be replaced with instant coffee.

Recipe


  1. Once the mixture has cooled to room temperature, transfer it to a container and place in the freezer.
  2. After 20 minutes, take it out and beat the contents with a mixer for a minute. Return contents to freezer. Do this 3 more times.
  3. Then leave the coffee ice cream until completely hardened for 2-3 hours.
