Option 4. Chicken liver pancakes with herbs

  • 60 g fresh lard;
  • mustard oil;

  • a pinch of kitchen salt;
  • clove of garlic;
  • ground black pepper;

  • ground paprika;
  • one egg;
  • lettuce leaves and dill for serving.

Step by step recipe

Rinse the chicken liver well, remove the offal from films and veins. Remove the skin from the lard and cut it into small pieces. Peel and wash the garlic and onions. Remove the stalk from the pepper pod, remove the seeds and cut the vegetable in half.

Using a meat grinder, grind chicken liver, vegetables and lard. Beat the egg into the resulting mass, add spices, salt and stir well. Add the flour little by little, folding it into the liver mixture. Leave the dough for seven minutes.

Heat a frying pan with mustard oil over moderate heat. Spoon the liver dough into the hot oil and fry until lightly browned on both sides. Place the finished pancakes on a plate, lining it with lettuce leaves. Garnish with dill sprigs and serve hot.

To make the pancakes soft and tender, add baking powder to the dough. Place the finished pancakes on a paper towel to remove excess fat.

Option 5. Chicken liver pancakes with rice

Children will enjoy liver pancakes with rice. They turn out tender and have virtually no specific taste or smell of liver.

  • chicken liver - 650 g;
  • sunflower oil;
  • one onion;
  • salt;
  • boiled rice - a glass;
  • ground black pepper;
  • 100 g flour;
  • one egg of the highest category.

How to cook

If the offal is frozen, place it on a plate and leave it on the counter until completely defrosted. Then carefully sort through, removing veins and films. Rinse the chicken liver well. Place in a blender container and blend until smooth.

Remove the skin from the onion head. Place on a board, cut in half and finely chop the vegetable. Add the onion to the minced liver and stir.

Rinse the rice, constantly changing the water until it becomes clean. Place the rice cereal in a small saucepan, cover with drinking water and place over low heat. Cook the rice until done. Then place on a sieve and rinse again under running water. Leave the glass to drain excess moisture. Add cooked rice to the liver mixture. Stir.

Now add the egg and flour to the liver mass. Season everything with pepper and salt. Stir. The mass should not be too thick.

Heat a Dutch oven with oil on the stove. Spoon the minced liver into the heated oil in the form of round pancakes. Fry on both sides, three minutes on each.

For liver pancakes, it is better to use steamed rice; it does not stick together, which means it will not turn into porridge.

Option 6. Chicken liver pancakes with mushrooms and cheese

Thanks to mushrooms and cheese, the pancakes are not only filling, but also incredibly flavorful. This version of liver pancakes will especially appeal to men.

Ingredients

  • 600 g chicken liver;
  • sunflower oil;
  • 400 g fresh champignons;
  • 3 g baking soda;
  • 100 g hard cheese;
  • salt;
  • a glass of sour cream;
  • seasonings;
  • 100 g of premium flour;
  • one chicken egg;
  • onions - one pc.

How to cook

Sort the liver and be sure to remove veins and films. Wash the offal and grind through a meat grinder with a fine mesh rack.

Add sour cream and baking soda to the liver mass. Stir and leave for ten minutes.

Rinse the champignons and remove the thin skin from the caps. Chop the mushrooms into small pieces. Remove the peel from the onion and chop it as finely as possible. Add mushrooms and onions to liver mixture. You can pre-fry them or grind them through a meat grinder with the liver.

Beat the eggs with a whisk. Combine beaten eggs with flour, seasonings and salt. Stir and add the resulting mixture to the liver mass. Grind the cheese on a grater into large sections and add to the liver dough. Stir.

Heat a frying pan with vegetable oil over moderate heat. Use a spoon to scoop out some of the dough and place it in the roasting pan in small patties. Fry until lightly browned on both sides.

Before twisting the liver through a meat grinder, carefully examine it for the presence of bile sacs. If there are any, carefully cut them out without damaging the bubble. Otherwise the dish will be bitter.
