  • Selected egg – 1 piece.

4. Place a frying pan on the fire, add vegetable oil and fry until golden brown.

5. Then add the mushrooms to the onions and simmer over low heat until all the liquid from the mushrooms has evaporated.

6. Add fatty minced meat and mix continuously until the ingredients are completely cooked.

7. When the potatoes are cooked, drain all the water and mash.

8. Let the potatoes cool slightly, then beat in the egg, add butter and continue kneading until thick, homogeneous and smooth.

9. Add salt and pepper to taste.

10. Add 2 tablespoons of wheat flour to the resulting puree and knead the potato dough. Flour will give the mashed potatoes stickiness and make it possible to form zrazy of the desired size.

11. Wet our hands in water, then make a thick cake from the potato dough. Place the cooled filling of minced meat, mushrooms and onions in the middle. Carefully cover the filling on all sides and form a pie.

12. Roll the potato pie in breadcrumbs.

    Over medium heat, fry the lard and onion, stirring constantly, until the vegetable cubes become translucent. After this, put the minced meat in the pan.

  • Beef – 100 g;
  • Turkey meat – 100 g;
  • Chicken egg – 2 pcs.;
  • Breading breading – 2 tbsp. l.;
  • Potato tubers – 600 g;
  • Ground turmeric – 2 pinches;
  • Sunflower oil – 2-3 tbsp. l.;
  • Young parsley - 2-3 sprigs.

Preparation:

  1. Before you start cooking, take care of the turmeric. Pour boiling water over its powder. A teaspoon of water is enough for two pinches. Leave to steep under the lid.
  2. Rinse beef and turkey and wipe off moisture. Cut into pieces and twist into homogeneous minced meat.
  3. Fry the minced meat in a frying pan with a drop of oil. You should not pour a lot of oil, otherwise the zrazy will not form a smooth patty.
  4. Boil one chicken egg until hard-boiled. If you decide to take quail ones, you will need 3-4 pieces. Once the egg has cooled, peel and finely chop it with a knife.
  5. In one container, mix minced meat, chopped egg and salt. The mass should be homogeneous.
  6. Boil peeled and washed potatoes until the pieces are soft. Remove from the broth. Puree. Do not use a blender for this, it will ruin the consistency of the potatoes.
  7. Add salt, turmeric tincture, raw egg and breadcrumbs to the cooled puree. The last two components allow the potatoes to come together into a homogeneous emulsion. Mix everything thoroughly to form a dough.
  8. Pinch off a little bit of dough and make flat cakes. Place a little filling on each one. Lift the edges of the dough up and form zrazy.

  • soft cream cheese – 170 g;
  • Dutch cheese – 100 gr;
  • wheat breadcrumbs for breading - 0.5 cups;
  • sour cream – 1 glass;
  • chopped greens – 2 tbsp;
  • salt – 1 tsp;
  • set of seasonings for potatoes – 1 tsp.

Cooking method:

  1. Cool and chop the boiled potatoes with mushrooms into slices, grind with a blender into a thick puree.
  2. Add the yolk beaten with salt to the potato and mushroom mince, add flour and spices.
  3. Place a spoonful of cream cheese in the middle of a minced cake, 7-8 cm in diameter, roll it into a cigar shape and pinch the edges.
  4. Roll the zrazy in breadcrumbs, fill the frying pan with them, pour in sour cream, and sprinkle with grated cheese on top.
  5. Bake for 20-30 minutes in an oven heated to 180°C. Sprinkle the finished dish with herbs.

Ingredients:

  • raw potatoes – 12 pcs;
  • raw egg – 1 piece;
  • cooked chicken fillet – 200 g;
  • flour – 2-3 tbsp;
  • garlic – 1 clove;
  • breadcrumbs - 1 cup;
  • sunflower oil – 100 ml;
  • pepper mixture – 1 tsp;
  • salt – 10-15 gr.

For filling:

  • cooked chicken fillet – 100 g;
  • boiled champignons – 7-8 pcs;
  • onion – 1 piece;
  • butter – 2 tbsp.

Cooking method:

  1. Chop the chicken fillet into pieces and puree the boiled potatoes in a blender. Beat the egg with salt and pepper, add to the minced meat with flour and grated garlic.
  2. Mix chopped boiled mushrooms and chicken pulp with chopped and fried onions.
  3. Prepare flat cakes from minced potatoes, wrap them with mushroom and meat filling, and form oblong zrazy.
  4. Fry on each side in a hot frying pan with sunflower oil.

Potato zrazy breaded in cheese with onion and egg

To make the mashed potatoes fluffy, try beating with a mixer on medium speed. If you are not afraid of the smell of garlic, use 2-3 chopped cloves instead of powder.

Cooking time: 1.5 hours.

Ingredients:

  • potatoes – 800 gr;
  • ground dried garlic – 1-2 tsp;
  • raw egg – 1 piece;
  • semolina – 2-3 tbsp;
  • salt – 0.5 tsp;
  • ground black pepper – 0.5 tsp;
  • vegetable oil – 100 ml;
  • hard cheese for breading – 200 gr.

For filling:

  • green onions – 2-3 sprigs;
  • dill – 2-3 sprigs;
  • boiled eggs – 2-3 pcs;
  • butter – 2 tbsp;
  • salt and spices - to your taste.

Cooking method:

  1. Add dry semolina and egg yolk mixed with salt and pepper to the prepared mashed potatoes. Stir until smooth, let sit for half an hour for the semolina to swell.
  2. For the filling, mix chopped herbs, grated boiled eggs, soft butter, salt and spices.
  3. Scoop up the potato mixture with a spoon and lightly flatten it into a flat cake in your palm. Add the filling on top, pinch the sides, and shape into a cutlet.
  4. Grate the cheese on a fine grater and roll in the prepared products.
  5. Heat the vegetable oil in a frying pan, fry the zrazy until golden brown.

Potato zrazy baked in the oven with minced meat and cream sauce

For zraz, you can use minced meat from boiled pork or chicken. Before filling the zrazy, mix the chopped boiled meat with sautéed onions and ground pepper.

Dilute the dry mass immediately with a few spoons of broth or potato broth.

Cooking time: 1 hour 40 minutes.
