Shortbread pie with jam is the simplest baking option that even an inexperienced cook can easily handle. This dessert also makes it onto the budget list. It consists of the simplest available and inexpensive products. Jam for filling can be used even in candied form.

The most popular recipe for shortbread pie with jam and crumbs on top is the classic grated, or “torn” version. Besides him, there are others.

The dough crumble on top of the pie adds a delicious crispy crust. And the jam filling always turns out tender and sweet.

If you are already tired of the classic version of the treat, you can experiment with its variations. For example, add nuts, sour cream, fresh fruits/berries and other delicious ingredients to the dessert.

“Torn” pie (classic recipe)

This pie turns out delicious the first time. This is a great baking option for a novice housewife.

Ingredients:

  • chicken eggs - 3 pcs.;
  • first-grade wheat flour - 3 tbsp.;
  • butter or margarine - 1 pack (250 g);
  • granulated sugar - 1 tbsp.;
  • baking soda, slaked with lemon juice - 0.5 tsp;
  • apricot jam - 2/3 tbsp.

Preparation:

If the apricot jam is prepared in large pieces, then for this recipe you should first grind it with a blender or at least grind it with a fork. Serve the pie cooled.

Sour cream pie with jam

The pie with sour cream dough turns out soft and tender. It is better to take a dairy product of medium fat content - not too thick. Sour cream, which has already begun to slightly sour, is also suitable as a base for the pie.

Ingredients:

  • butter - 200 g;
  • chicken egg - 2 pcs.;
  • sugar - 150 g;
  • sour cream - 150 g;
  • soda - 1 tsp;
  • flour - 300 g;
  • currant jam - 200 g.

Preparation:

  1. 1. Remove all ingredients stated in the recipe from the refrigerator in advance so that they become the same (room) temperature. Place the contents of raw eggs into a bowl. Pour all the sugar on top at once. Mix the ingredients well. You can lightly beat them. The sugar should begin to dissolve in the egg mixture.
  2. 2. Add the remaining bulk components to the base for the future dough. Pre-sieve the flour and soda a couple of times from a high distance. Add sour cream to the mixture. Repeat mixing.
  3. 3. The bowl should have an elastic and soft dough that is easy to work with. It needs to be divided into two approximately equal parts. One of them should be placed in the freezer for about half an hour. The second must be immediately distributed over an oiled baking sheet with high sides. You can roll it out with a rolling pin, but it’s convenient to just knead the dough with slightly damp hands.
  4. 4. You need to distribute the selected currant jam on top. Its layer should not be too thick. The already frozen part of the dough should be crushed using a grater with the largest divisions and distributed on top of the spread jam.
  5. 5. It is necessary to preheat the oven to +170...+175 degrees in advance. Place the baking sheet with the future pie into it. Bake the treat for about an hour. During this time, the pie with currant jam should be covered with a golden, delicious crust on top.

The finished delicacy needs to be cooled and cut into portions. Plum and apple jam also goes well with the dough from this recipe.

Delicate version with fruit soufflé

This shortbread pie has a separate name - “Sissie”. If you try the delicacy, you will immediately understand where it came from. The dessert tastes like Bird's Milk, but is prepared much faster and easier.

  16. 16. Add small pieces of peeled fruit to the future soufflé. Beat the ingredients together until smooth.
  17. 17. Dissolve gelatin in a water bath or in the microwave. Strain through cheesecloth. Pour little by little into the egg white mixture. Beat ingredients at minimum speed.
  18. 18. Pour the egg white mixture onto the pie base.
  19. 19. Refrigerate for a couple of hours. Leave until completely hardened.
  20. 20. Turn the remaining baked parts of the dough into crumbs. Sprinkle it over the already frozen soufflé pie.

Secrets and tricks of making dessert

The pie filling includes berry/fruit jam. You can choose any according to your taste. Peach, apricot, and strawberry make the dessert very sweet. And currant and cranberry give a pleasant sourness.

If the jam is liquid, then it is worth decanting some of the syrup from it. Otherwise, the filling will ooze out the sides of the pie and make the bottom too soggy. You can avoid this by rubbing a little potato/corn starch onto the base.

There are other secrets to making a delicious pie:

  • Baking powder can be replaced with regular baking soda. To neutralize its taste in baked goods, you need to quench the dry product with lemon juice.
  • Do not put a pie with shortcrust pastry in a cold oven. Otherwise, its base will turn out to be hard, and the filling will spread heavily over the surface. You should always set the temperature specified in the recipe in advance and wait until the oven warms up well.
  • If you want to get a tender, soft pie, then you need to remove it as soon as the dough stops sticking to the wooden splinter. For crispy baked goods, you will need to keep the treat in the oven longer.

Why shortbread pie with jam may not work out

There are several typical mistakes that housewives often make when preparing shortbread pie filled with jam, even following step-by-step, understandable recipes. They lead to the fact that the dry sweet cake has to be thrown away. What not to do:

  • Use butter/margarine that does not freeze easily. Usually, non-domestic products are easily spread on bread even after several hours in the freezer. Such butter or margarine absorbs too much flour, resulting in a dry and hard base.
  • Roll or rub the dough slowly and for a long time. It should not have time to warm up from the warmth of your hands.
  • Measure the amount of basic bulk products with a glass. It is best to use scales. Not every cook knows that only 160 g of flour fits into a 250 ml glass.

Like all peoples of the world, the Germans especially value their culinary history, in which the Streuselkuchen pie, or “streusel,” takes pride of place. It is not known exactly who came up with this recipe. But information has been preserved that by the end of the 19th century the pie was known and knew how to cook in every region of Germany.

Originally, streusel was made from a yeast dough filled with pudding or fruit filling and sprinkled with shortbread crumbs. Today, the pie is made with both sponge and shortbread crust, depending on the density of the filling, and with different streusel heights.

How to make confectionery crumbs: cooking secrets

The success is largely due to the addition of sugar and flour crumbs, which are now also called streusel. After baking, it turns into a golden-brown crispy crust and gives the pie not only a great taste, but also a presentable appearance.

It’s not at all difficult to make your own culinary crumbs, or streusel. The cooking recipe involves using the following ingredients: 60 g of flour, 30 g of sugar and butter at room temperature. The optimal proportion for streusel is 2:1:1. You can add egg yolk (for a golden brown crust). All ingredients are combined in one bowl and, using a regular fork, ground until crumbly. After this, the mass is further crushed by hand.

You can sprinkle the finished streusel on any muffins and cookies. Thanks to the inexpensive and easy-to-prepare crumbs, you can achieve a golden-brown and aromatic crust on sweet baked goods.

Cooking tips:

  • butter can easily be replaced with high-quality margarine;
  • if the crumbs stick together, you need to add a little more flour to it, and if they fall apart, then, on the contrary, add butter;
  • The streusel will turn out even tastier if you add cinnamon, orange zest, chopped nuts or cocoa to taste.

Silesian streusel pie: recipe with cottage cheese

This recipe comes from Silesia, a historical region in Central Europe that covers parts of Germany, Poland and the Czech Republic. And the debate still continues: who actually invented the real streusel, the Germans, Poles or Czechs.

In Silesia, streusel is prepared according to a traditional recipe, that is, based on yeast dough. The most delicate curd mass based on cream cheese is used as filling, and the top of the pie is generously sprinkled with culinary crumbs.

The pie dough is mixed from a packet of yeast (7 g), a glass of milk, 50 g of butter or margarine, 50 g of sugar, a pinch of salt and 450 g of flour. There is no need to pre-prepare the dough. Simply combine all the ingredients and knead into an elastic dough. Leave it on the table for half an hour, wrapped in film, until it rises a little.

Meanwhile, beat 3 eggs, 200 g of sugar and the same amount of butter with a mixer until a thick and high foam forms. Then add 1 kg of cream cheese to the same mass. Mix well and put in the refrigerator for a while.

Make the streusel. The recipe is as follows: grind 200 g of sugar, the same amount of butter, a little cinnamon and 350 g of flour into crumbs.

Form a pie. Roll out the yeast dough and place it on a rectangular baking sheet, raising the edges slightly. Spread the curd filling evenly on top and sprinkle thickly with crumbs. Bake at 175 degrees for 35 minutes.

Original streusel pie with strawberries: recipe

Add dry ingredients and 100 ml of milk to the egg-butter mixture. Beat with a mixer and pour the dough into a baking dish. Place strawberries cut into large slices on top. The streusel is evenly distributed on top.

Basic components of shortcrust pastry

The dough is prepared from a standard set of products:

  • Butter with a mass fraction of fat from 72 to 82.5%.
  • Sour cream with fat content from 15 to 20%.
  • Sugar (you can add vanillin).
  • Freshly squeezed lemon juice.
  • Wheat flour of the highest or first grade.
  • Table salt.

This composition of ingredients is suitable for making cookies.

The base for baking closed and grated pies must be supplemented with the following components:

  • chicken egg;
  • loosening agent;
  • margarine (instead of butter).

Baking algorithm

When preparing shortcrust pastry, it is important to follow a certain sequence of actions:

  1. Mixing the mixture of flour and butter (you can use either butter or margarine).
  2. Cooling the oil mixture.
  3. Add granulated sugar to the cooled butter base and beat the mixture.
  4. Forming the finished mass (adding pre-beaten chicken eggs, vanillin, flour, sour cream, lemon juice, table salt and baking powder), mixing the mixture until elastic.
  5. Place the finished dough in the refrigerator for a period of 0.5 to 1 hour (the bowl with the dough must first be wrapped in cling film).

Only after all the above manipulations can you begin to form the pie. To do this, place the dough in a special container with sides and, if necessary, fill with filling.

The sweet pie is placed in an electric oven for 20 minutes. Before baking, the device must be heated to 200 C.

Then crushed walnuts, salt, vanillin, and baking powder are added to the mixture. If desired, the walnut can be replaced with other ingredients, for example, lemon or orange zest. Cinnamon, nutmeg or ginger add a good taste to the shortbread product. These ingredients are added according to individual taste.
  2. The thoroughly mixed crumb dough is placed in a special form with sides or on a baking sheet. To prevent the cake from burning, it is recommended to cover the bottom of the baking container with parchment paper, which has been pre-greased with oil.
  3. The sand crumbs are placed in the mold in a dense layer. The top is filled with jam, marmalade or jelly. The main thing to remember is that the filling should not be liquid. The top layer of crumbs should be thin (the bulk of the crumbs go to form the bottom of the pie).
  4. Final decoration of the cake. The finished shortbread product is removed from the oven. Cool slightly and decorate with chocolate chips on top.

Our family really loves baking from shortbread dough, so I bake a lot of shortbread pies with different fillings. But when it’s time for berries, this is the recipe that all relatives prefer and it supersedes all others. This shortbread pie can be made with any berries: cherries, strawberries, blueberries, currants (black and red), plums, blackberries, cinnamon apple (finely chopped and pre-toasted with cinnamon in a frying pan). Notice how easy it is to prepare! There is no need to knead anything, just rub the ingredients for the dough between your fingers.

Ingredients

To make a shortbread pie you will need:

For the test:

300 g wheat flour;

200 g butter at room temperature;

100 g powdered sugar (fine sugar).

For filling:

500 g pitted cherries (fresh or frozen);

40 g cane sugar (you can safely use regular sugar);

4 tbsp. l. potato starch;

3 tbsp. l. ground vanilla crackers.

* Mold with a diameter of 23 cm.

Cooking steps

To prepare the crumbs, take flour, powdered sugar and butter at room temperature.

Place about half of the crumbs in a lightly buttered pan and press lightly with your hands to form an even layer.

Place in the oven to brown for 15 minutes, preheated to 180 degrees.

Take out the crust and sprinkle evenly with ground breadcrumbs. Rusks can be grated on a fine grater.

Let's prepare the filling. If you use frozen cherries, be sure to let the juice drain. Add starch and sugar to the cherries and mix gently.

We spread the filling onto our crust, sprinkled with breadcrumbs.

Sprinkle the remaining crumbs on top, just sprinkle it, no need to press hard and level it. The top of the pie should be loose.

Cherry crumb cake is ready. We enjoy the result!

Bon appetit!

Today I wanted to make shortbread pie with jam and crumbs on top, so I decided to use my favorite recipe and share it with you. I have butter in the ingredients, but in principle you can replace it with margarine, although in the first case it tastes better.

I use a classic recipe for shortcrust pastry for a pie, which has never let me down and it turns out really tasty and easier to prepare than others. There are a minimum number of ingredients, and they are all very simple. Also, there is no need for sour cream or kefir.

This recipe for shortbread pie with jam and crumbs can be made with any jam or preserves. I decided to add apricot, and for homogeneity I additionally blended it in a blender. The classic recipe for grated pie will come in handy if you need something tasty to make for tea. Even guests are not ashamed to serve this on the table.

In fact, this jam pie is made quickly and easily, so I’m sure that any housewife can definitely make it. I also recommend seeing how easily you can decorate the top so as not to rub the dough and it will look more interesting.

Ingredients:

  • Chicken eggs – 2 pcs.
  • Sugar – 1 tbsp. (200 ml.)
  • Slaked soda – 0.5 tsp
  • Butter – 200 g
  • Wheat flour – 400 g
  • Apricot jam – 200 g

How to make grated pie with jam

So, first of all, I’ll show you how to make shortcrust pastry for a pie. Beat eggs into a mixer bowl and add sugar. I set the mixer to beat at medium speed, and at this time I melt the butter.

When about 3 minutes have passed and the mass has become fluffy, but not like thick foam, such a consistency is not needed, I add slaked soda and melted butter.

I stir and add the sifted flour. It is necessary to sift it in order to saturate it with oxygen and check for the presence of anything unnecessary in it.

First, I add only 100 grams of flour, and begin to knead it with a spatula, then another 100, and so on until I have poured it all out. As a result, the dough comes out soft, not dense, but I don’t recommend filling it with flour if you need delicate shortbread pastries.

Now about how to form a grated pie with jam. I divide the dough into 2 parts, but not equal, but large and small. For now I put the smaller one in the freezer in a bag.

I cover a baking sheet with parchment and place a large piece of dough on it, and then simply distribute it evenly with my hands to make it the same thickness everywhere. I don’t make sides, I don’t see the need for it.

Since I have grated shortbread with jam, namely apricot, but I only found jam, I simply pureed the required amount in a blender until smooth. Next, I distribute it evenly throughout the dough, just a little short of reaching the edges.

At this time, you can already turn on the oven to heat up to 180 degrees. I take the second part of the dough out of the freezer and grate it on a coarse grater, directly on top of the jam, but so that it is approximately even. I didn’t mix more flour into this piece and rubbed it like that, but I know that some people add flour to it to make it harder, because it froze just a little and it’s not very convenient to rub because of this. You do what is most convenient for you.

This is the simple and easy jam pie recipe I came up with. I bake it for about 20 minutes until golden brown.

Next, together with the parchment, I transfer it from the baking sheet to a cutting board and let it cool, after which I cut it into portions.

Its base turned out to be thin, which only makes it tastier.

This is the shortbread pie I have with jam and crumbs on top, I really like it, so I advise you to bake it. And as a filling you can take any jam and preserves, and it is better that it is not very sweet, but with a slight sourness. Enjoy your tea!
