Easy

Ingredients

  • wheat flour - 150 g (7 level tablespoons);
  • sour cream 15% - 200 g;
  • egg - 4 pieces;
  • soda – 0.5 teaspoon;
  • vinegar – 1 teaspoon;
  • salt – 0.5 teaspoon.
  • For filling:
  • chicken fillet (minced meat) - 400 g;
  • potatoes - 2 pieces;
  • greens (green onions, dill) – 1 bunch;
  • salt, black pepper.

Preparation

The recipe uses eggs weighing 60-70 grams (first category). If your eggs are smaller, use a little less flour so that the dough is not rubbery. Beat the eggs into a large bowl, add a pinch of salt (or the entire amount from the dough ingredients).

Beat eggs with salt until foamy.

Mix flour with soda and sift it into the dough. Instead of soda, it is permissible to use 1 teaspoon of baking powder.

Add sour cream. For an interesting taste of the dough, replace some of the sour cream with kefir or mayonnaise. In this case, only add salt at the end so as not to oversalt the dough.

Mix the dough and add vinegar. Mix again. The soda in the dough will be extinguished. Although many people do not add additional baking soda when using fermented milk products. But we do this so that the taste of soda is certainly absent.

Let's start with the filling. Grind the chicken fillet, salt and pepper the minced meat. Add 1-2 parts chopped herbs. Mix well. If you don’t have minced meat or don’t want to chop the meat additionally, you can cut the chicken into small pieces

Peel the potatoes and cut them into cubes. Add the remaining herbs and salt the potatoes so that they are not bland. Seasonings - rosemary and others are welcome.

Line a springform baking pan with parchment. Grease the walls and bottom with vegetable oil, this is an additional safety net so that the cake can easily come out of the mold. Pour 2/3 of the dough into the mold. Place half of the potatoes without reaching the sides.

Form the minced meat into a flat cake in your hands and place it on the potatoes. If you do not do this, it will be difficult to distribute the minced meat evenly.

Cover the minced meat with the remaining half of the potatoes.

Fill everything with the remaining batter.

Place the pie in the oven for 40 minutes at 180 degrees. Then increase the temperature to 220 degrees and hold the cake for another 5 minutes. It will brown on top.

After cooling completely, the bulk pie with potatoes and minced meat can be cut and served as an appetizer.

  • 1 tsp Sahara;
  • 1 tsp soda (without top);

Mince pie filling

As the meat component of the pie, you can choose not only minced meat, but also just meat. Pieces of chicken or pork (not very fatty) are great. My favorite filling for this pie is minced beef. The filling can be put into the pie raw, but in this case you need to increase the baking time. I prefer to put almost ready-made filling in the pie.

Peel the onions and potatoes. You can cut it into thin circles, or in other ways, the main thing is to do it thinly, into thin slices. First fry the onion in a frying pan for three minutes, then add the minced meat to the onion and fry together for about 4-5 minutes, stirring. Place the potatoes in boiling water for 1-2 minutes. It should be cooked slightly so that the pie doesn't have the potato crunch from the raw potatoes.

Take a pie pan or a regular cast iron frying pan and grease it well. Pour in some of the dough, then lay out the potato slices. A little more dough and minced meat filling with onions. Finally, fill the pie with the remaining dough. Place the pie pan in the oven and bake at 200 degrees for 15 minutes, then reduce the temperature slightly and bake for another 15-20 minutes. It turns out incredibly delicious, I recommend it! I’ll be glad to hear from you in the comments how you prepare jellied pies, your tricks and secrets :)
