Stir and begin to slowly add water, kneading the dough.

The dough will be quite elastic. It's this light brown color, thanks to the rye flour.

When the dough is ready, leave it to rest for half an hour, covering it so that it does not dry out.

At this time, let's start filling and preparing for baking.

To do this, grease the baking dish with vegetable oil. And sprinkle it all evenly with ground bran, even the sides.

This way the cake will be beautiful and will not stick to the pan.

Roll out the dough and place it inside the mold. Cut the apples into thin slices and arrange them beautifully overlapping each other.

You need to chop the walnuts a little and sprinkle them over the filling. We also sprinkle it with sugar and cinnamon on top.

We tuck the sides nicely, removing excess. Place whole walnuts around the circumference.

It perfectly combines soft, crispy yeast dough and tender cabbage filling.

Ingredients

For the test:

  • Sunflower oil – 80 ml
  • Sugar - 30 gr
  • Salt - 10 g
  • Dry yeast - 7 g
  • Wheat flour - 550 gr
  • Warm water - 350 ml

For filling:

  • Cabbage - 1 head
  • Green onions - bunch

Preparation

Let's prepare the filling.

Chop the cabbage and, after adding salt, simmer it until half cooked for 15-20 minutes in a frying pan.

Ingredients

  • Flour - 2 tbsp (480-500 g)
  • Baking powder - 1 tsp.

  • Sugar - ⅔ tbsp
  • Lenten margarine - 120-150 g

Preparation

Ingredients

For the test:

  • Boiled potatoes - 2 pcs.
  • Potato decoction - 200 ml
  • Salt - 1 tsp
  • Sugar - 1 tbsp
  • Yeast - 20 g fresh or 7 g dry

Preparation

Cover the future pie and leave for 25-30 minutes to proof. Then grease its top with vegetable oil.

Place it in the oven at 210-220 degrees for about 30-40 minutes.

This pie is a quick improvisation of fruit that needed to be eaten urgently before it went sour.

The pie is not for those with a sweet tooth. I wanted to make a pie with as natural a taste as possible, so there is very little sugar. I didn’t measure the exact amount of ingredients, I prepared everything by eye.

Filling

  • Apricots.
  • Plums.

Dough

  • Peeled rye flour - about 2 cups.
  • Wheat flour - the same amount.
  • Vegetable oil - approximately 1 cup.
  • Brown sugar - a couple of tablespoons.
  • Salt - a pinch.
  • Baking powder - a couple of pinches.
  • Water (cold) - by eye until the dough is elastic.

How to cook Lenten pie on rye flour with apples and apricots - recipe with photo

I removed the pits from the apricots and cut the apricot pulp into small pieces. By the way, I cook with seeds.

I also have a lone plum lying in my refrigerator. She also got involved. I cut it the same way as apricots.

I grated the apples on a medium grater.

I mixed them with apricots and plum pieces. Added sunflower seeds.

A little brown sugar - about a couple tablespoons.

And also cinnamon and ginger.

For vegan charlotte we will need:

Apples - 3 pcs.

Flour - 1.5 tbsp. I have whole grain.

Semolina - 1.5 tbsp. You can add only flour, but I like it with semolina.

Sugar - 0.5 tbsp. (I prefer healthy - coconut or palm). It's not in the photo, I forgot to add it, sorry)

Ground ginger - 1 tsp.

Ground cinnamon - 1 tsp.

Coconut milk - 1/2 tbsp.

Water - 1-1.5 tbsp.

Soda - on the tip of a teaspoon. Slaked with lemon.

When you buy coconut milk, be sure to look at the ingredients! It very often comes with all sorts of “left-handed” chemical additives - preservatives, flavorings, thickeners... There should only be coconut pulp and water. I buy small 200 ml bags, since milk spoils quickly, and I simply don’t have time to use a large jar.

So, we prepare it like a regular charlotte:

2. In a comfortable deep bowl, first mix all the dry ingredients - flour, semolina, sugar, spices. The amount of sugar in the recipe was 3 times more - as much as 1.5 cups. But through experience I came to the conclusion that this is too much. Half a glass is the most ideal option!

3. Next, add liquid to the dry ingredients - 1/2 cup of coconut milk and about 1-1.5 cups of water. I do not recommend using coconut milk undiluted with water, because... it is quite fatty and heavy for the body.

Do not add water all at once, but in parts. The consistency should resemble sour cream - quite thick, but pourable. Mix everything thoroughly. This can be done with a simple spoon. A mixer is not needed for this recipe.

4. At the very end, add soda slaked with lemon juice to the dough. It turns out like this:

5. Next, take a baking dish. I have a round silicone one, it almost doesn’t stick to it. But I still have a little trick - I sprinkle a little semolina on the bottom of the pan - this way the cake will not burn 100%! The main thing is not to lubricate it with any oil, it is harmful. Any oils, including cold-pressed ones, release carcinogens when heated and clog our body.

That's all, now all that remains is to place the pan with the pie in an oven preheated to 180 degrees. The pie will bake for 35-40 minutes. - a great opportunity to do something enjoyable. For example, I managed to do a full Pilates workout during this time)

How to cook with photos step by step




Sift both types of flour through a sieve. Add spices and mix. Pay attention to the type of rye flour - it can be peeled, wallpaper and sifted. For pies and pies, sifted and peeled rye flour is better suited - these varieties have a finer grind than wallpaper. If the variety is not indicated on the packaging, be guided by the color and degree of grinding of the grain. The sifted flour is light, almost like wheat, peeled and has a light gray or cream tint with small dark inclusions (it is used in this recipe).




Pour sugar into a deep bowl. You can reduce the quantity to 100 grams if the goal is to reduce the calorie content of baked goods. Beat in two eggs.




Using a mixer, beat the egg-sugar mixture until white and doubled in volume. The mass should become fluffy and fluffy, and the sugar should almost dissolve.






Pour in a glass of kefir at room temperature. Stir.
