We will need:

  • Canned beans (red or white - no difference) - 200 grams
  • Cheese – 150 grams
  • Pickled cucumber – 2 pieces
  • Garlic – 1 clove

We prepare the salad like this: Boil the chicken breast - whole or fillet - cool, cut the meat into small pieces. Cheese - it is better to take hard varieties - three on a fine grater. Cut the pickled cucumber into small cubes - and also into a bowl. Pass a clove of garlic through a garlic press. You can take either white or red beans. Canned is better, but you can also pre-boil it - it will take more time to prepare the salad, but it will be more healthy. Finally, add sweet canned corn, season everything with mayonnaise and, as the French say, “Bon appétit!” ("Bon appetit!").

By the way, if you have never boiled beans in your life, now I’ll tell you how to do it. The whole difficulty is that before cooking it is advisable to soak it in water for six or eight hours.

After this, cook the red beans for about fifty to an hour, and the white beans for about forty-five to fifty minutes. By the way, you don’t have to pre-soak white beans in water; in this case, you will have to cook them for one and a half to two hours.

It is most convenient to boil beans in a slow cooker. To do this, turn on the “Stew” mode and cook white beans for one hour, and red beans for one and a half hours.

I love bell peppers, so I take a larger one, or put two small ones. Grind hard cheese (better if it is Russian or Kostroma) on a fine grater. Boil the eggs hard, cool and finely chop. It is better to take red beans for canned beans. It is advisable to rinse it. Peel the onion and cut it into half rings. Mix everything, add mayonnaise. It can be replaced with olive or other vegetable oil. I like it even better this way. Place lettuce leaves on the bottom of a wide bowl, and on top - the salad we prepared.

You can take “Kirieshki” or “Kompashki” crackers, preferably without flavoring, classic ones. Or you can cut 3 pieces of bread into cubes and dry them in the oven or microwave (5-10 minutes will be enough). Grind the garlic in a garlic press or chop it very finely. Parsley and green onions can be added to taste. Now season the salad with mayonnaise and add a little salt. The dish is ready!

How to properly boil chicken for salad?

The main secret: you need to boil not frozen meat, but chilled meat. Ideally, you need to take one that has not been frozen at all. Be sure to immerse the breast in boiling, non-salted water. This way, all the juice will remain in the meat, and it will not be tough after cooking. You need to cook for no longer than 20 minutes: the longer you cook, the tougher the meat! Well, it is still advisable to cook the breast with skin and bones. Although the finished fillet is, of course, easier to prepare and cut, we will no longer achieve that softness and juiciness. And keep in mind that with skin on, the breast will cook for 5-10 minutes longer.

In the next salad - “Astoria”, be sure to add boiled chicken breast; smoked will not work here.
