To prepare a snack salad, we will need chicken breast, tomato sauce, onions, salt, sugar, water, vinegar, peppercorns and bay leaves. You also need a little sunflower oil to fry the onions. Instead of tomato sauce, you can also use ketchup according to your taste.

Cut the chicken breast into medium-sized pieces.

Cover with boiling water for 30 minutes.

Pour water into a saucepan, add sugar, salt, bay leaf and peppercorns. Boil. Then pour in the vinegar.

Drain the fillet from the water it was in and pour in the hot marinade. Cover again and leave to marinate for 4 hours.

Fry the onion until transparent in sunflower oil, cutting it into half rings.

Add tomato sauce to the onion. I used . Heat the onion and sauce for 5 minutes.

Drain the marinade from the chicken fillet and add the pieces to the pan. Simmer together for 3 minutes.

Mix well. It can be served either hot or cold - delicious in both versions.

In Soviet times, the main decoration of the table was meat salad. Well, what remains for those who were unable to purchase the coveted, scarce peas? And the people have always had a desire to diversify the festive table, always having the same set of products. And one of the variations of Olivier was the capital salad with meat. Almost the same set of products, only the greenery of the peas is replaced by the brightness of the carrots.

Of course, delving into historical references, you will definitely find that the main difference between the capital city was the presence of chicken meat instead of sausage or beef. Well, who now adheres to a clear recipe when preparing any salad or appetizer? Let us dwell on the fact that the recipe for the capital salad differs from the mandatory presence of carrots. And in this dish there is no place for any sausage, only the meat component: meat, tongue or heart.

Like everyone else these days, I try to use leftover food in some way. So there was a use for several pieces of shish kebab. It won’t be able to feed a family of 4 people, but it’s perfect for a snack.

Salad "Capital"

Ingredients:

  • Large pieces of shish kebab - 4 pcs.
  • Large potatoes - 2 pcs.
  • Eggs - 5-6 pcs.
  • Large carrots - 1 pc.
  • Large pickled cucumber - 3 pcs.
  • Mayonnaise
  • Greenery

Boil vegetables: potatoes and carrots. Hard boil the eggs too. One secret about potatoes. To avoid the hassle of peeling boiled vegetables, cut the skins of raw potatoes in circles.

Cool the vegetables. Pre-cut potatoes peel easily and without problems. The peel peels off on its own and there is no need to deal with potato “rags”.

While the vegetables and eggs are boiling, you need to prepare the remaining ingredients. cut into cubes. Perhaps someone will doubt the logic of using kebab. Like, the marinade will kill the whole taste of the dish. Nothing like this. Firstly, the smoke from the fire will only add additional zest to the snack. And, secondly, my kebab was marinated in spices and mayonnaise, so there was no vinegar, beer or wine aroma.

Cut the eggs into cubes with a knife or egg slicer. I love them in salad, so I always have the maximum amount of eggs.

Carefully peel the skin of boiled carrots and cut the fruit in the same way as everything else - into cubes. This vegetable should be bright orange in color and have a juicy, slightly sweet taste. If the fruit is fibrous and bitter, then it is better to use small carrots and chop them very finely. From such a carrot we only need its brightness, that is, its orange presence in the dish.

Cut the crispy pickles into small cubes.

To prevent the salad from getting soggy, squeeze the cucumbers thoroughly. You can use your hands, or you can let them drain and put them on a sieve.

Cut the potatoes into cubes.
