  • minced meat - 300 gr.;
  • potatoes - 7-8 pcs.;
  • vermicelli - 4-6 tbsp. l.;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • vegetable oil - 1.5 tbsp. l.;
  • salt - 1 tbsp. l.;
  • bay leaf - 1 pc.;
  • greens - to taste;
  • water - 2.5 l.

Cooking method:

To prepare soup with meatballs, you can use any minced meat. If you take previously frozen minced meat, then completely defrost it and carefully drain all the liquid that drained from the minced meat during defrosting.

You need to make small balls from the minced meat. Place the resulting meatballs in a saucepan with water and place over medium heat.

While the water is boiling, peel the potatoes and cut them as you are used to doing.

Wash the onions and carrots, peel and chop. The onion should be chopped into small cubes with a knife, and the carrots should be grated on a fine grater.

Add vegetable oil to the chopped vegetables and fry over medium heat until softened.

When the broth with meatballs boils, remove any foam that has formed from it.

Add chopped potatoes and cook for about 10 minutes.

After this add vermicelli. Let it boil.

Using a spoon, place the fried onions and carrots into the pan.

Add a spoonful of salt.

Add bay leaf and any chopped herbs. Can be used fresh, frozen or dried.

Bring the soup to readiness and remove from the stove. You can let it brew for 15 minutes under the lid and serve.

When I was little, I simply adored this delicious soup, which we were often given in kindergarten. And today I will tell you how to prepare this delicious soup with meatballs and noodles and then a step-by-step recipe with photos. To be honest, I don’t even know what could be easier in terms of preparing this first course for the dinner table.

It takes me about 30 minutes to prepare noodle soup with meatballs, no more. Like other soups with bones or meat, you need to cook for at least 1.5 hours. So this is a very economical option for a delicious lunch, both in terms of money and time.

As for meatballs, they can be prepared from any minced meat that you like best. I had their minced pork and beef in my freezer for a long time, and I used it to make soup.

How to cook soup with meatballs, potatoes and noodles

Products:

  • Minced meat – 200 grams
  • Potatoes – 2 pcs.
  • Onion – 1 pc.
  • Carrot – 1 pc.
  • Vermicelli – 1-2 tbsp.
  • Butter – 50 grams
  • Salt, spices to taste

Step-by-step recipe for making vermicelli soup with meatballs

Usually the soup begins with the preparation of meat broth. Fortunately, in this case this is not necessary. But while you are preparing vegetables and minced meat, put the water on gas so that it has time to boil by the time you add food to it.

While the water is boiling, peel, wash and cut the potatoes into small cubes.

Cut the onion into 2 parts and chop into small pieces.

Grate the carrots on a coarse grater.

Place one half of the onion into the minced meat. Salt and pepper the minced meat. And so that the minced meat does not lose its meatball shape during cooking, you can add a couple of spoons of breadcrumbs and yolk to it.

Mix the minced meat well with your hands and make small meat balls.

Place potatoes into boiling water.

Then add the meatballs and cook for 10-15 minutes. Be sure to throw the meatballs into boiling water to prevent them from falling apart.

While the potatoes are boiling, you can prepare the frying.

Melt the butter in a frying pan and add the onion, fry until golden brown.

Add spices (bay leaf, cumin, coriander, pepper) and carrots to the fried onion and fry until the carrots are ready.

Transfer the roast into the soup.

Add vermicelli, bring to a boil and turn off the heat. Leave the soup to steep for 15-20 minutes. During this time, the vermicelli will reach the desired state. This is how I always cook pasta: I bring it to a boil and immediately turn off the gas. And leave it for 15-20 minutes under the lid.

Dip the formed chicken meatballs into boiling water. Form small meat balls with wet palms. Reduce heat to low to obtain a nice, clear, clean broth. We are waiting for it to boil.

Now that our hands are free and we have time, let’s prepare the frying. Chop the onion and grate the carrots.

Onions and carrots are medium-small in size. If they are large, then halves are enough, otherwise the soup will be too vegetable, and the sweetness of the carrots will affect its taste.

Pour vegetable oil into a frying pan. We do not fry the roast too much, but lightly - as in the photo.

The water with the meatballs has boiled, add the potatoes. There is not much noise (stumps) in the broth, but if it appears, it must be carefully removed.

Add the frying mixture to the soup that has boiled after adding the potatoes.

After 10 minutes, add salt and vermicelli.

Boil for no more than 5 minutes and remove from heat.

  • salt and ground black pepper - to taste;

  • sunflower oil – 1 tbsp.

How to cook:

Take minced beef or chicken, remove pepper from the recipe, and do not fry vegetables - carrots and onions, then the soup will be completely dietary and perfect for baby food.
