• Wheat flour 180 g
  • Cocoa powder 3 tbsp. l.
  • Baking powder for dough 1 tsp.
  • Water 5 tbsp. l. (for the crust) + 2 tbsp. l. (for cream)
  • Sour cream 1 cup (for the cake) + 130 g (for the cream)
  • Milk chocolate 1 bar
  • Bananas 4 things. (for the crust) + 2 pcs. (for cream)
  • Gelatin 1 tsp.
  • Liquid cream 250 ml
  • Powdered sugar 50 g
  • Preparation

    To get the buttercream right, beat it with a whisk and not with a blender, as the cream can turn into butter, and we don’t want that.

    • First, separate the yolk from the white. Do this very carefully so that the yolk does not get into the protein mass. Mix the yolks with a whisk with water, the temperature of which should be 70 degrees. Add some sugar. Beat for about 2-3 minutes. Now take a separate bowl and beat the egg whites until fluffy and fluffy. Use a mixer for this. This will speed up the process. After this, transfer the mixture into the yolks. Mix gently using a wide spatula. Set the bowl aside. Start preparing the crust.

    • First, sift the wheat flour and add baking powder and cocoa. Mix the ingredients. Now add the flour mixture to the mixture of whites and yolks. Mix with a blender at minimum speed for about 5-7 minutes. Prepare a baking dish and pour the mixture into it. Preheat the oven to 180 degrees and bake for 20-30 minutes. When the cake is ready, remove it from the oven, but do not remove it from the pan. Set aside until completely cool.

    • Once this has happened, make a small indentation in the cake as shown in the step-by-step photo. To do this, use a sharp knife and cut out the core. Step back from the edge by about 2-3 cm. Leave the bottom intact.

    • Then prepare the cream with cottage cheese. To do this, take a container and put gelatin in it, fill it with water and wait for it to swell. In the meantime, grate a chocolate bar and 1 ripe small banana separately. Then take a bowl and combine the curd and banana. Mix well and add sugar and cocoa powder. Now you can add the grated chocolate and beat with a mixer at medium speed for about 5 minutes. Take a separate bowl and stir the sour cream in it. Use a medium fat product. Add the swollen gelatin to the mass and mix again. Now pour the mixture of sour cream and gelatin into the curd cream. Mix thoroughly. Once all the ingredients have dissolved and mixed together, put the filling in the refrigerator for 15-20 minutes.

    • Make buttercream. To do this, you need to mix cream (less than 30% fat) and sour cream. Do this with a tablespoon in a tall container, as shown in the photo. Grate 1 banana on a medium grater and add to the container with the cream. Then add a little sugar and mix the ingredients thoroughly using a whisk.

    • Start shaping the cake. First, peel 2 bananas and cut into 2-4 pieces (depending on what size you have). Then grate the core of the cake, which you cut out from the workpiece, on a fine grater. Place fruit in the center of the dessert. To ensure they fit completely, press them firmly.

    • Then place a mixture of sour cream, curd and sour cream on top. Distribute evenly over the entire surface.

    • Next, sprinkle the dessert with soft grated cake. Do this in such a way as to completely cover the cream. Place in the refrigerator until the baked goods are thoroughly soaked. Dessert is the final chord of any meal. This is that bright note that creates the mood and shapes the overall impression. Therefore, every housewife strives to make this dish interesting, tasty and unusual. The “Mole Mink” cake is unique in its simplicity and amazes with its exquisite taste. This funny name is associated with the unusual appearance of the dessert, reminiscent of a mole’s house.

    The classic recipe is a combination of rich chocolate sponge cake, delicate creamy curd cream and banana freshness.

    To make chocolate sponge cake you will need:

    • 5 eggs;
    • A glass of sugar;
    • Half a glass of flour;
    • Half a glass of cocoa;
    • 1 tsp baking powder.

    In a separate container, beat eggs with sugar. The result should be a fluffy light mass. In a second container, mix flour, cocoa and baking powder. Then carefully fold the dry ingredients into the egg-sugar mixture using a whisk or silicone spatula.

    Place the resulting biscuit dough into the mold. It must first be greased with butter. Bake the biscuit in an oven preheated to 180 degrees for 35-50 minutes. The readiness of the biscuit is determined with a skewer. It should be dry.

    While the sponge cake is baking, you can prepare the curd cream.

    Required ingredients:

    • Cottage cheese 9% 300g;
    • Cream 33-35% 150g;
    • Powdered sugar 3 tbsp;
    • Gelatin 10g;
    • Chocolate to taste.

    Gelatin must be poured with cold water until completely swollen. Cottage cheese can be used both regular and soft (paste-like). If granular cottage cheese is used, it must be rubbed through a sieve to obtain a uniform consistency.

    Beat heavy cream with powdered sugar until stiff peaks form. Mix the resulting buttercream with cottage cheese until smooth. Dissolve the swollen gelatin in a water bath until liquid and add to the creamy curd mixture. If desired, you can add chocolate chips to the cream. To do this, grate milk or dark chocolate.

    Cool the finished biscuit. Then you need to cut off the top and remove all the crumb so that you get a kind of bowl. Place a banana cut into large pieces at the bottom. Place curd cream on top. Grind the remaining crumb into crumbs and sprinkle it on top of the cake.

    After assembly, you need to put the cake in the refrigerator for at least 6-8 hours, ideally overnight.

    The “Mole Mink” cake with bananas is very tender and will appeal to everyone’s taste.

    "Maulwurftorte" in a slow cooker

    The Mole Mink cake also has a second name: Maulwurftorte. Today, many housewives are wondering how to prepare this unusual cake in a slow cooker.

    There are no fundamental differences in preparation. The only difference is that the biscuit is baked not in the oven, but in a slow cooker.

    Chocolate sponge cake recipe for cooking in a slow cooker:

    • Flour 2 cups;
    • Sugar 2 cups;
    • Egg 2 pcs;
    • Cocoa 6.5 tbsp;
    • Soda 1.5 tsp;
    • Milk 1 glass;
    • Vegetable oil 1/3 cup;
    • Boiling water 1 cup.

    Beat the eggs with sugar until a fluffy white mass is obtained. Add vegetable oil and a glass of milk. Mix everything until smooth. Mix the dry ingredients in a separate container and then add them to the liquid mass in 3 stages. Gently mix everything with a whisk until a homogeneous mass is obtained. Pour the resulting dough into the multicooker bowl, which must first be greased with oil. Bake for 60 minutes in the “Baking” mode.

    German dessert with cream

    For those who do not like the curd taste in desserts, there are several alternative recipes. One of these is a German cuisine cake with whipped cream.

    To prepare cream cream you will need:

    1. Cream 33-35% fat 500 ml;
    2. Powdered sugar half a glass.
    3. Chocolate chips.

    Heavy cream must be well chilled. Place in a container, add powdered sugar and beat until stiff peaks form. Then add chocolate chips. The cream is ready. Gelatin can be used to further thicken the cream.

    Attention! The amount of powdered sugar to prepare this cream is arbitrary. You can change its quantity according to taste.

    Mink Mole Cake with Mascarpone

    Another interesting option for preparing this dessert is a recipe using mascarpone cheese cream. The uniqueness of this recipe also lies in the fact that the cream here turns out to be chocolate.

    Ingredients:

    • Mascarpone 500g;
    • Heavy cream 500g;
    • Powdered sugar half a glass;
    • Dark chocolate 100g.

    Chilled cream must be whipped with powdered sugar to strong peaks and carefully mixed with mascarpone.

    Attention! Mascarpone cheese cannot be whipped with a mixer, because... this may result in oil formation instead of cream.

    Melt the chocolate in a water bath and add to the cream cheese mixture. Mix everything until smooth.

    With strawberry

    The fruit filling of the “Mole Mink” cake can also be varied. One of the interesting flavor combinations would be making this cake with strawberries. The recipe for cream and sponge cake remains classic, but strawberries are placed at the bottom of the sponge “bowl” instead of bananas. First, the sponge cake is coated with a layer of strawberry jam or preserves, which in turn will give the necessary sweetness to the dessert. Fresh strawberries are laid on top, and then creamy curd cream.

    How to cook with condensed milk

    When preparing this cake, condensed milk can be used both in the cream and in the sponge cake itself.

    Recipe for chocolate sponge cake with condensed milk:

    • Flour 1.5 cups;
    • Egg 2 pcs;
    • Sugar 1 glass;
    • Condensed milk 200g;
    • Sour cream 20% 1 cup;
    • Soda 1 tsp;
    • Cocoa 4 tbsp;
    • Vinegar 2 tsp.

    Beat eggs with sugar, add condensed milk and sour cream. Mix everything until smooth. Mix the dry ingredients in a separate container and then gradually add them to the liquid mixture. Finally, add vinegar and mix everything again. Bake at 180 degrees for 40 minutes.

    Recipe for butter cream with condensed milk:

    • Condensed milk 1 can;
    • Heavy cream 500 ml.

    Whip the cream with condensed milk until thick. You can use gelatin for a more stable structure.

    Mink Mole Cake without bananas

    Sometimes the question arises whether it is possible to make a Mink Mole cake without bananas. The answer is unequivocally “Yes”. There are 2 options for solving this problem. In the first case, you can simply not put bananas on the bottom of the cake. In this case, the dessert will consist only of chocolate sponge cake and butter cream. In the second case, instead of bananas, you can use other berries and fruits. Peaches, pineapples, cherries, strawberries and even raspberries work well here.

    The cake of German origin “Mole Mink” is a worthy guest on tables. Its tenderness and lightness will not leave any guest indifferent. It can rightfully become the signature dish of your meal.

    The idea of this original cake has been haunting me for a long time - we really like everything chocolate and with bananas, and then the design is so interesting!..

    The Mink Mole cake really looks like a cone in the garden bed where this velvety underground animal has been.

    And when cut, the cake looks very impressive!

    Fluffy chocolate cake, buttercream and bananas - a delicious combination! There are many variations of this cake recipe on the Internet, but, as often happens, I came up with my own version. Because I didn’t want to make the filling from cottage cheese or sour cream and yogurt jelly; not everyone here likes jelly and cottage cheese. But just cream is a very rich cream. Therefore, for the filling, I decided to combine cream and sour cream in equal proportions. And I didn’t want to add the crust...condensed milk, as some recipes recommend; and, after thinking, I remembered what the mole hole reminds me of – also a banana-chocolate cake “Banana Hill”! Which, in turn, is made based on the Cherry Hill recipe. So a mound of cake is quite suitable for a mink :) I baked a small cake in a 17 cm mold.

    Ingredients:

    For the crust:

    • 2 large eggs;
    • 150 ml light sour cream 15%;
    • 180 g sugar;
    • 150 g flour;
    • 1 teaspoon baking powder (slightly topped);
    • 2 tablespoons cocoa powder;
    • A pinch of salt.

    For filling and cream:

    • 150 g thick sour cream (at least 25%);
    • 150 g homemade heavy cream;
    • 2-3 tablespoons of powdered sugar;
    • 2 bananas.

    How to bake:

    Prepare the dough for the crust: in one container, mix the sifted flour, baking powder, salt and cocoa.

    And in another, beat eggs, sugar and sour cream. You can use a whisk or a fork, but it’s better to use a mixer - it will turn out more fluffy.

    Now pour the dry mixture into the whipped mass and mix.

    The result is chocolate dough, as thick as for cupcakes.

    Pour it into a mold, the bottom of which is covered with an oiled circle of parchment, and the sides are also greased with vegetable oil.

    Bake the cake at 200C for 35-45 minutes (until a wooden skewer is dry).

    Let the cake cool, remove from the pan and cut off the top.

    And then we carefully take out the middle, so that you get a “bowl” of cake. It is convenient to first cut with a knife from the edge, stepping back a couple of centimeters from the edge of the cake, and then use a spoon. Just be careful not to make a hole in the bottom of the cake. The top can be eaten by the most impatient tasters while waiting for the cake, but the crumb from the middle will be useful to us. Crumble it with your hands into fluffy crumbs.

    Let's prepare the cream. Combine the cream, sour cream and powdered sugar, and beat just a little so that all the ingredients are well mixed.

    I used a whisk because heavy cream is very easy to beat with a mixer - a couple of seconds, and it will turn into butter. You can add small pieces of banana to the cream.

    Place a little cream on the bottom of the cooled cake. And then we'll cover the peeled bananas.

    And put the rest of the cream on top in the form of a slide.

    And on top we decorate the cake with the crumbled center of the cake - lightly pressing the crumbs onto the cream, we form a cone.

    We put the cake in the refrigerator for a couple of hours so that the cream sets - when cooled, the cream thickens and holds its shape better.

    Now you can try the cake!

    Fans of chocolate pastries, delicate cream and sunny sweet bananas will love this cake :)

    Wormhole cake is made from a chocolate sponge cake filled with whole bananas, which are covered with a delicate soufflé and sponge crumbs.

    Actually, this is the main idea for decorating a dessert, but there are many options for its implementation. On the Internet you can find various recipes for making the sponge cake itself; soufflé is made from cottage cheese or even whipped cream, even without the use of gelatin. But as a result, the design and presentation of the cake remains the same.

    If you know what it looks like mole hole, then you will definitely understand the idea of this dessert. Decide for yourself which recipe to use, but I, for my part, suggest chocolate sponge cake and curd cream.

    German chefs call this cake Maulwurfkuchen or Maulwurftorte, which means “Mole Cake.”

    Kitchen appliances and utensils: mixing bowls, mixer, blender, kneading spatula, cake pan (26 cm), baking parchment, pastry ring.

    Features of product selection

    If you are preparing the “Mole Mink” cake with bananas according to the recipe with curd cream, like mine, it is advisable to use homemade cottage cheese. Moreover, choose a thicker one, which does not crumble, but is literally cut. You can, of course, take store-bought, but it has a grainy texture and for me these grains often do not break, remaining in the filling. Of course, this is not critical; the dessert still turns out delicious.

    How to make a mink mole cake at home

    Now we will look in detail at how to prepare the Molehole cake, focusing on the step-by-step recipe given below.

    1. Place flour, baking powder and cocoa powder into a bowl. Mix all this well.
    2. The mixture must be thoroughly sifted so that the biscuit turns out fluffy and tender.

    3. Separate egg whites from yolks.
    4. Boil water. Beat the yolks and gradually pour boiling water into them, add vanilla sugar.
    5. Now add granulated sugar in portions.
    6. Beat with a mixer for 5-7 minutes at high speed.
    7. Now in a separate bowl, beat the whites with a pinch of salt until stable.
    8. Place the beaten whites on top of the beaten yolks without stirring.
    9. Place the flour mixture on top there. You can do it all at once, or you can do it in several steps, gradually mixing.
    10. This must be done quickly, but kneading thoroughly so that there are no dry lumps in the dough.

      You need to mix as carefully as possible with a spatula. Lifting the mass from below, we lift it up, separating it from the edges, and pulling it towards the center. This will preserve the airiness that we achieved by beating the whites and yolks.

    11. Line the cake pan with baking paper and pour the resulting dough into it.
    12. After the cake has cooled, carefully run a knife along its edges and remove it from the mold.
    13. Place the container in the oven for half an hour. It should already be heated to 180°C.
    14. Then cut out the entire middle of the biscuit. The sides and bottom should be 1.5 cm.

      You can cut out the cake no earlier than a couple of hours after baking!

    15. Fill the cut out sponge cake tightly with whole bananas.
    16. Place a mound of cream on top. To ensure that the edges of the cake remain clean and are not accidentally stained with cream, a pastry ring is first placed on the sponge cake. You can remove it before laying out the crumbs.
    17. Place the mashed biscuit crumbs onto the cream with your hands and press onto it.
    18. Place the finished cake in a cool place for a couple of hours.

    Cream recipe

    In order for the cream to whip well and quickly, it must be processed cold. Moreover, it is advisable that the bowl in which you will beat them, and even the whisks, also lie in the refrigerator first.

    How to beautifully decorate and serve the “Mole Mink” cake

    The “Mole Mink” cake does not require special decorations; if you look for a step-by-step recipe with photos, you will rarely be able to find any decorative options.

    I usually just dust the cake with cocoa powder. Then it really looks like the mound that moles leave when digging holes. But I saw that some housewives decorate it with berries and mint leaves.

    I always scrolling form with the dough before putting it in the oven. Then the cake turns out smooth. Although, this is more a matter of habit. In this dessert, evenness plays a minor role - we cut out the middle anyway.

    If you have few bananas, you can put them not whole, but cut along in half. I took whole ones, so it took me 7 pieces, but if I did it with halves, 4-5 pieces would be enough.

    I don’t really like soaked cakes, so I don’t suggest such manipulations in this recipe. But sometimes the biscuit turns out a little dry. Then, by cutting out the middle, you can soak its syrup (sugar and water in proportions 2:3), juice, tea, aromatic alcohol - whatever you like.

    Video recipe for the Mink Mole cake

    Here is another option for making a cake. True, in this case the biscuit is prepared with condensed milk, so it does not turn out very high. But the author says that in this case the cake becomes more moist and fragrant.

    Invitation to discussion and possible improvements

    Cream can be made not only from cottage cheese. A couple of times, when I couldn’t find a suitable product, I made sour cream and yogurt, which also turned out well. Once I made it exclusively with cream. It turned out a bit greasy, but everyone was still happy. Next time I mixed cream and sour cream in equal proportions - it turned out easier.

    I also saw that some people replace bananas with various berries. I have never decided to change the recipe like this, it seems to me that the taste of the dessert will change a lot. Maybe someone tried it and will tell you what happened?

    Sometimes we really want to please our loved ones and guests with a new original dessert, especially if everyone has already become tired of traditional baked goods. However, the Internet often offers too risky or expensive cake options, and the result of such an experiment is often disappointing. For me, such a problem does not exist, since I always use the proven guides of my mother, who knows how to cook the most gourmet treats with incredible ease and speed.

    Amazing beautiful dessert with chocolate sponge cake and a delicious banana layer is considered an example of traditional French pastries, which are famous for their tenderness and airiness. The recipe for the “Mole Mink” cake usually involves successful production step by step both in the oven and in a slow cooker. There are also two classic options for the layer: with curd cream and with butter. This simple dessert may come across you on the Internet under a different name - Rabbit Hole pie, or Raccoon Mink pie, but it will still be the same good old Mole Mink. It is no coincidence that the picture in the preview of our article was chosen to depict a figurine of this particular animal on the cake.

    Prepare a cake mold with a diameter of 28-30 cm (you can use metal, but I usually use glass or silicone), baking paper, deep bowls 500-900 ml, teaspoons and tablespoons, whisk, measuring cup, grater, cake dish with a diameter of 30 cm. In addition, I strongly advise you to prepare a blender to facilitate mixing and whipping.

    You will need

    Korzh

    Curd cream

    • 250 g. cottage cheese;
    • 160 g granulated sugar;
    • 1 glass of sour cream;
    • 1 chocolate bar;
    • 4 ripe bananas;
    • 2 tbsp. spoons of water;
    • 20 g gelatin;
    • 1 teaspoon cocoa.

    Creamy cream

    • 250 g of cream with a fat content of at least 30%;
    • 50 g powdered sugar;
    • 130 g. sour cream with a fat content of at least 25%;

    Cooking sequence

    Curd cream

    Ground nuts or raisins, as well as lemon juice are sometimes added to curd cream, but experienced cooks do not recommend getting carried away with this, since additional ingredients may prevent the cream from hardening well.

    Creamy cream

    Some cooks advise whipping the buttercream with a blender, but I prefer to do it the old-fashioned way, with a whisk, since the cream turns into butter very quickly if mixed at high speed.

    Assembling the cake

    Your delicious cake is ready! Isn’t it true that it almost looks like a real wormhole? It does not require additional decoration, but no one can forbid you to sprinkle the surface of the cake with a pinch of cinnamon or vanillin - this will make your product even more attractive aroma. Serve it cut into delicious pieces so that guests can admire the splendor of the delicate filling.
