Salad "Prague"

Prague salad with chicken and prunes is unusual and interesting because of the ingredients included in the recipe and the taste. A properly prepared dish will easily decorate a holiday table.

To prepare you will need:

  • 150 grams of prunes;
  • 250 grams of chicken breast (it is better not to use other parts of the chicken, as they are more fatty);
  • 2 chicken eggs;
  • 4 tablespoons of canned green peas;
  • one carrot;
  • half an onion;
  • 4 tablespoons of mayonnaise;
  • 1 pickled or pickled cucumber;
  • pepper and salt to taste.

Recipe:

Although the dish is unusual in composition, each product gives it a special taste: prunes make it “smoked,” cucumber gives it a slight sourness, and carrots give it a pleasant sweetness and juiciness.

Prepare the food and start cooking. Boil the chicken fillet and carrots until tender – this usually takes 15 minutes. If you cook the meat longer, it will lose its juiciness and become dry.

We also boil the eggs for 10 minutes and then leave them to cool in cold water.

We wash the prunes in a colander and then dry them with a towel.

We clean the carrots and eggs. Cut the breast into small pieces and place half of the meat in the salad bowl as the first layer. Salt it a little and coat it with mayonnaise.

The next layer is diced cucumber and onion, which should also be soaked in mayonnaise (every layer is soaked in it).

Grind the eggs together with the carrots and place them in a salad bowl. Scatter the peas and leftover chicken evenly over the top.

The top of the dish is decorated with prunes, pre-cut into strips.

As you prepare the Prague chicken salad with prunes, cover it with film and leave for a couple of hours. After this, the dish can be served.

Chicken salad with prunes and walnuts

  • Chicken – 250 grams (1/2 chicken breast),
  • Prunes – 130 grams (5-6 pieces),
  • Walnuts – 60 grams (handful with top),
  • Eggs – 3 pieces,
  • Cucumber – 300 grams (1/2 greenhouse or 1-2 ground small),
  • Mayonnaise to taste

Cooking method

Preliminary preparation

For this salad we will need to boil hard-boiled eggs (8 minutes after boiling) and chicken breast. It needs to be poured with a small amount of water, salted, brought to a boil, turn the heat down to low and cook for 20 minutes. Next, the products will need to be removed from the water and allowed to cool. The prunes need to be washed, pour hot water and let stand for 10 minutes until they become soft.

Next we'll just walk you through the layers. Those who do not need a detailed description can immediately follow the link below, where I have summarized everything in a short listing. Others who are interested or necessary can immediately start watching all the details of preparing a salad with chicken, prunes and walnuts with step-by-step photos.

1st layer – chicken and mayonnaise

I chopped the cooled boiled chicken into small pieces, about 3-4 millimeters in size. I placed it in a salad bowl in an even layer, trying to replicate the oval shape.

Apply mayonnaise to this layer. If you have chicken breast, then do not skimp on mayonnaise - it is lean and should be thoroughly soaked in sauce. I put 2 tablespoons. If you took fattier meat, for example, from a thigh, then the amount of mayonnaise can be halved.

2nd layer – prunes

The prunes will look like a sticky paste after soaking. I cut each berry in half, then into strips and crosswise into cubes. Then I laid it on top of a layer of chicken. So that it does not crumble around the edges. There is no need to coat prunes with mayonnaise!

3rd layer – walnuts

The nuts need to be cut with a knife. To prevent them from bouncing off and scattering across the table, first lightly press them down with the flat side of the knife, and then chop them into pieces. When laying them in a layer on the prunes, press them slightly to the surface. If some of it falls down, it’s okay. You will get a very cute baby. Essentially a natural design. We also do not apply mayonnaise to this layer!

4th layer – egg white and mayonnaise

We need to separate the eggs into yolks and whites. Set aside the yolks and finely chop the whites. There will be quite a lot of them. Place on top of the nuts, leveling and lightly compacting.

Immediately place a thick layer of mayonnaise on the whites. We don't regret it! I don’t really understand how people make a mayonnaise mesh. Apparently, they are transferring the sauce somewhere from a standard container with a thick plastic neck. I drop these balls from plastic packaging over the entire surface of the whites. And then I go over it a little with a tablespoon. My mayonnaise is thick, it forms nice waves along the edge of the salad.

Layer 5 – cucumbers and mayonnaise

If you have long greenhouse cucumbers, there is no point in peeling them - the thickness of the skin is not much different from the middle. If the cucumbers are ground or pimply varieties, be sure to remove the skin. Chop the cucumber into smaller pieces. I do this in cubes of 2-3 millimeters. Place it on top of the whites. Proceed carefully.

Apply a small layer of mayonnaise on top of the cucumbers, about 1.5 tablespoons. Distribute carefully.

6th layer – egg yolk

The salad preparation is coming to an end. All that remains is to decorate it with yolk. Grate it with a fine grater and, starting from the center, sprinkle the entire top of the salad. You can press the yolks a little, but then sprinkle them with more yolk crumbs on top to create a fluffy effect.

That's all. Let me briefly summarize the layers:

  1. boiled chicken + mayonnaise,
  2. prunes,
  3. walnuts,
  4. egg white + thick layer of mayonnaise,
  5. cucumber + mayonnaise,
  6. grated yolk.

Salad “Tenderness” with chicken and prunes

Experienced cooks and professional chefs from all over the world have proven to us that chicken meat is in perfect harmony with such incompatible ingredients as pineapple, apple, almonds, and honey sauce.

Another unusual variation on this theme is the “Tenderness” salad of chicken with prunes and walnuts. The dish turns out to be very high in calories and nutritious, but especially useful for people suffering from cardiovascular diseases.

Prunes are rich in ascorbic acid, organic acids, riboflavin, carotene, so dried fruit has a beneficial effect on the functioning of the body as a whole.

Champignons are sometimes added to a salad with chicken and prunes. The mushrooms are cut into slices, fried with onions in sunflower oil in a frying pan until tender, cooled, and then added to the salad. To prevent excess oily liquid from forming in the salad, drain the mushrooms in a colander.

Serve the prepared chicken and prune salad in layers on a common platter or in portions in small salad bowls.

  • Chicken eggs – 4 pcs.
  • Chicken fillet (or breast) – 300 g.
  • Pickled cucumbers – 2 pcs.
  • Prunes (pitted) – 150 g.
  • Hard cheese – 120 g.
  • Walnuts – 80 g.
  • Salt, pepper - to taste.
  • Mayonnaise - for dressing.

Cooking process

The washed fillet is cleaned of excess veins and boiled until tender in salted water. Transfer the chicken meat to a separate bowl, cool, and then cut into small pieces.

The boiled fillet will turn out spicy if you add a few black peppercorns and bay leaves to boiling water. This option for preparing meat is also suitable for salads made from pineapples, chicken, and prunes.

To make the chicken for the salad with prunes, cheese and cucumber tender and flavorful, leave it in the marinade for one hour. To prepare it, pour sour cream into the bowl, add salt, ground pepper or, if desired, spices (cumin, ginger, dried basil). A piece of chicken is placed in a bowl with marinade for forty minutes.

The prepared fillet is baked in the oven for forty minutes at 180 degrees. Cool, cut the chicken into proportional pieces for a salad of cheese, prunes and nuts.

Walnuts are poured into a bag and crushed with a rolling pin or beat the kernels to coarse crumbs in a blender. Several large walnut kernels are left to decorate a salad of prunes, chicken and cucumber.

Boil hard-boiled eggs in a separate bowl. They are peeled and the whites are separated from the yolks.

The cheese is grated on a fine grater.

Pickled cucumbers are cut into small cubes.

Prunes are washed with water. If the dried fruit is too hard, soak it in boiled water for fifteen minutes. At the end of the process, the prunes are cut into small cubes.

All ingredients of chicken salad with prunes are mixed in a deep bowl. The consistency of the dish is tender, so it should be carefully mixed with a spoon. Due to the fact that spices stimulate the release of juice in fresh vegetables, pepper and salt are added to the prune and smoked chicken salad before serving.

A salad with chicken and prunes, as in the photo, will turn out to be original if you arrange it in layers.

  • To do this, place fillet pieces on the bottom of the dish and cover them generously with mayonnaise.
  • Crushed egg whites are poured onto the chicken meat, and the layer is again evenly coated with dressing.
  • Then prunes and nuts are added and covered with a mayonnaise mesh.
  • The same is done with pieces of pickled cucumbers.
  • The final layer of chicken and prune salad according to the recipe will be the yolks, which are also generously poured with sauce.

What to dress the salad with?

To make the dressing in the puff salad with prunes and chicken especially tender, mix mayonnaise and yogurt in equal proportions.

You can prepare homemade mayonnaise for a salad with chicken, nuts and prunes. To do this you will need one egg, a tablespoon of lemon juice, a little mustard, salt and sugar, ground black pepper, a glass of sunflower oil.

  1. Beat the egg in a blender until smooth.
  2. Pour in the oil in a thin stream and beat again.
  3. If homemade mayonnaise for prunes, chicken and walnuts for salad turns out to be liquid, you need to add more sunflower oil.
  4. At the end mustard, pepper, sugar and salt are added.

The finished salad of chicken, cheese and prunes is placed in the refrigerator for one to two hours to soak.

Before serving, decorate the dish with parsley or dill. In a salad with prunes, mushrooms, and chicken, fresh greens will look juicy if you soak them in ice water and leave them in the refrigerator for half an hour.

  • walnuts – 30 g

Preparation

Big photos Small photos

    Separate pre-boiled and cooled chicken fillet into fibers - this way the structure will be airier and more tender (which fully justifies the name of our salad). Place the meat on the bottom of the salad bowl.

    Lubricate with mayonnaise - I use homemade sauce, with a pronounced mustard note. If you have store-bought mayonnaise with a vague taste, you can add a little mustard to it, this will make the taste of the salad brighter and piquant, not so bland. Please note that all layers of salad must be greased carefully, without pressing - this is another secret to the tenderness of the dish.

    The second layer is prunes and nuts. Use good quality prunes that are fleshy and juicy, with a slight smoky flavor. If it is still a little dry, then first pour boiling water over it and leave it for a while so that the prunes absorb some liquid and become juicier. Chop the prunes with a knife and immediately place crushed walnuts on top - beat about a handful in a blender into fine crumbs (leave a couple of kernels for decoration). Lubricate with mayonnaise.

    Peel the hard-boiled eggs and separate them into whites and yolks. Grind the yolks into crumbs on a grater and brush the layer with a small amount of mayonnaise.

    Cut the cucumber into thin strips, lay out in an even layer, brush with mayonnaise. Under no circumstances should you use a grater! Slicing must be done by hand, otherwise the cucumbers will leak and instead of adding a refreshing note to the salad, they will make it watery and tasteless.

    Grate the egg whites on a coarse grater. Flatten, lightly salt, grease with mayonnaise.

    Sprinkle grated cheese on top. Place the “Tenderness” salad in the refrigerator for 1 hour to infuse.

    Before serving, garnish with nuts and parsley. Serve chilled.
