Remove part of the tail from each pepper (if it is dry or too long). Prick each pepper on all sides with a knife or toothpick (about 7-10 pricks each) so that the marinade soaks the inside of the pepper.

Peel the garlic and chop it with a knife (not finely).

Heat the frying pan well, add vegetable oil (about 2-3 tablespoons), lay out some of the bell pepper (in one layer) and fry over medium heat on all sides until golden brown and lightly pierced. Important!!! Be sure to fry the peppers covered, as you can burn your hands during the cooking process. It fries very quickly; when turning it over to the other side, do not open the lid too much, but only slightly open it.
When the first batch of peppers is ready, place them in a jar and cover with a metal lid.

Fry a new batch of peppers, put them in a jar, place some garlic and a couple of parsley sprigs on top. Thus, fill the jar with fried peppers, parsley and garlic up to the shoulders of the jar. Boil water and fill the jar of pepper with boiling water up to the neck. Immediately seal the jar with a lid. Take it with a towel and gently rock it from side to side so that the sugar and salt dissolve. Turn it upside down and wrap it up for a couple of days. Then put it in the cellar.

Step 1: Prepare the pepper.

Choose ripe, beautiful peppers, without spots or visible damage; the skin and walls of the vegetables should be intact and healthy. Rinse the peppers with warm water, removing dirt with a soft brush. After washing, dry the vegetables using paper towels to remove moisture.

Step 2: Fry the pepper.


Heat a small amount of vegetable oil in a frying pan. Place the peppers in a frying pan and fry them over medium heat under a closed lid until golden brown. Then turn the vegetables over to another side and continue cooking. The peppers will be ready as soon as they brown.

Step 3: Marinate the roasted peppers.



Put the water to boil. At the same time, prepare a clean jar and place a few peeled garlic cloves on its bottom, as well as add salt, sugar and vinegar. Place the fried peppers in jars, and then pour boiling water over them, filling the jar to the very neck, leaving no room for air. Screw the lids on the jars, wrap them in a blanket or towel, turn them over, place them on the lids and leave until they cool completely.
After cooling, the jar of pickled fried peppers can be put away with other preparations.

Step 4: Serve the marinated roasted peppers.



Marinated fried peppers are best served as a holiday snack, especially with meat and spicy dishes and strong drinks. But he is so good that any dish in his company becomes several times tastier. Therefore, don’t be afraid to prepare more at once; you’ll eat it all before you even have time to blink an eye.

How to cook roasted bell peppers without sterilization

When starting canning, we wash the pepper well, cut out the stalk with a knife and remove the seeds.

Place crushed garlic, salt, a piece of hot pepper, vinegar, and sugar on the bottom.

We set water to boil on one burner, and next to it, on the second burner, heat a frying pan with oil.

Fry the peppers in oil until golden brown on all sides, place in a jar, pressing down with a spoon. When frying, be careful: splashes of hot oil can burn your hands.

Fill the jar with fried peppers up to the shoulders and add boiling water.

Roll up the iron lid and wrap it in a blanket until completely cooled. If you do not have your own cellar, then such canned peppers in the filling will be perfectly preserved at room temperature.
