A simple soup with meatballs and noodles fits perfectly into the daily menu. The recipe, of course, is not new, but nevertheless delicious and impeccable! If desired, the soup can be prepared in a modern variation, for example, adding sweet peppers, ripe tomatoes, hearty bacon and any other ingredients, or you can trust the good old recipe, leaving everything unchanged.

A colorful and attractive first course attracts with its aroma and mouth-watering notes! Let's prepare the meatball soup, following the step-by-step recipe with photos.

Ingredients per 2 liters of water:

  • minced meat - 300 g;
  • carrots - 1 pc.;
  • onion - 1 pc.;
  • potatoes - 2-3 pcs.;
  • small vermicelli - 2-3 tbsp. spoons;
  • greens - a small bunch;
  • salt, spices - to taste.

  • First, let's prepare the ingredients. We cut the peeled carrots into thin circles, miniature cubes or long strips: the cutting method in this case does not really matter. We free the onion from the husk. Peel the potatoes and cut them into small cubes.
  • From the salted minced meat we form meatballs the size of a walnut.
  • Place meat balls in boiling water, add onion and carrot slices. To obtain a richer broth, you can first sauté carrots and onions in vegetable oil, but such a dish will be fattier and higher in calories.
  • Cook the broth over moderate heat. After 15 minutes, add potato cubes.
  • Boil the first dish for another 10-15 minutes, and then add small vermicelli. Now you can salt the soup to taste and add your favorite spices/seasonings if desired. Keep the broth on the fire for another 5 minutes (until the vermicelli is completely cooked and the potatoes are soft).
  • It is advisable that before serving, freshly brewed soup sits in a saucepan, covered, for about 20 minutes - this will make the broth richer. Serve the simple soup with meatballs and noodles hot. An excellent addition to the rich broth will be fresh dill, juicy parsley, green onions, etc. Generously sprinkle portions with finely chopped herbs.
