How to choose fish?

The dorado fish has a silvery skin without spots, a rounded head and short fins. In general, her appearance is quite characteristic, standing out among other species. In order for dorado baked in the oven to turn out delicious, you need to be careful when choosing fish.

The eyes should be clear, the gills should be bright red, and most importantly, the fish should not have any unpleasant odors. It is advisable to choose chilled dorado rather than frozen, then the dish will turn out more tender and juicy.

Preparing for baking

Primary processing of fish involves removing scales and entrails. Dorado is often baked in the oven entirely, including the head. In this case, it is worth removing the gills, otherwise they may cause an unpleasant smell of mud. Small scales can be easily removed using a special cleaning knife. Dorado is baked in the oven in foil, parchment paper or simply on an open baking sheet.

Combination of ingredients

Many ingredients and classic sauces go well with this noble fish. Citrus fruits perfectly complement the taste of dorado: lemon, orange, lime. Among the spices that go well with it are oregano, dill, thyme, thyme, marjoram, leeks and most other aromatic herbs.

Vegetables are often baked in the oven along with dorado. For such recipes, you can choose multi-colored bell peppers, juicy tomatoes, carrots, white asparagus, and green peas. Eggplants, zucchini and even pumpkin are also good for cooking together. You can experiment with potatoes, but first you need to bring them to half-cooked, because the fish bakes faster.

How to bake dorado in the oven?

For this simple recipe we need 4 headless fish, 1 lime, a few sprigs of rosemary, a pinch of pepper and salt. It is best to take sea food - it is tastier and healthier. Gutted and cleaned fish are salted inside and out, sprinkled with lime juice, and rosemary is placed on top. It is convenient to bake on confectionery parchment, then the fish will be juicier and will not burn.

Next, all that’s left is to put the baking sheet in the oven and wait for our dorado to cook. The oven recipe recommends baking the fish for about 40 minutes, although it can bake much faster. Sanitary standards state that heat treatment of fish should take at least half an hour, so it is worth maintaining the allotted time. Moreover, dorado is a fairly oily fish; it is difficult to dry it out. In addition, when baked for a long time, this fish develops an amazing smoky aroma.

You can also use foil for the same recipe. This method will especially appeal to those who love aromatic crust and tender meat. The dorado is baked in the oven in foil for the same amount of time. At the initial stage of cooking, the edges of the foil can be connected so that the fish ends up in the bag. This will allow the pulp to steam and infuse the aroma of lime and rosemary.
